Tomato Capsicum Rice is a wonderful treat for lunch or dinner.

Tomato Capsicum Rice is delicious and easy to make. It contains cooked rice, tomato, capsicum, onion, and some spices. It has a high nutritional value. If you have a tiring day and not motivated to really cook but still have to elaborate meal then this is the best option. Most of the people face this and to quick-fix it generally ends up eating unhealthy food. Cooking healthy food is not always a tiring job. So try this simple and easy recipe and yet healthy.   • Do not overcook vegetables.
  • You can use oil or clarified butter/ghee instead of butter.
  • If you want you can add garlic and green chilies also.
  • You can also add grated cheese.

Ingredients

  • Cooked Rice / Pake Hue Chawal - 1/2 Cup
  • Tomato / Tamaatar - 1 Medium Sized, Chopped
  • Capsicum / Shimla Mirch - 1 Tablespoon, Chopped
  • Onion / Pyaaz - 1 Small Sized, Chopped
  • Cumin Seeds / Jeera - 1 Teaspoon
  • Turmeric Powder / Haldi Powder - 1 Pinch
  • Red Chili Powder / Lal Mirch Powder - 1/2 Teaspoon Or As Required
  • Butter - 1 Tablespoon
  • Coriander Leaves / Dhaniya Patta - 2 to 3 Strands, Finely Chopped
  • Red Chili Flakes - As Required
  • Salt / Namak - To Taste

Instructions

  1. Heat butter in a pan. As it melts, add cumin seeds and onion. Saute them on high flame for few seconds.
  2. Add chopped capsicum and saute. Do not overcook it. Keep it crunchy.
  3. Add chopped tomato and cook.
  4. Add turmeric powder, red chili powder and salt. Mix it well.
  5. Now add cooked rice. Mix thoroughly.
  6. Add coriander leaves and sprinkle red chili flakes over it.
  7. Delicious 'Tomato Capsicum Rice' is ready to be served.
