Turai Ki Sabzi | Beerakaya Pesara Pappu is a unique and healthy sabzi.

Turai Ki Sabzi | Beerakaya Pesara Pappu is an innovative, easy, and quick sabzi. This sabzi is very healthy as it is rich in protein and fibre. The unique part of this sabzi is that you do not need to peel the skin of the ridge gourd. This is a great recipe as it retains the fibre that is generally lost if you peel the ridge gourd. Some other ingredients that this recipe uses are tempering and freshly grated coconut which enhance its taste. Since this recipe uses very basic and less ingredients, it is an easy recipe to prepare. This sabzi does not require much time to prepare and hence is a quick recipe. So try preparing this sabzi at your home and enjoy it with your family and friends.   • If the ridge gourd is soft and fresh, there is no need to peel the edges.
  • Adding freshly grated coconut is optional.

Ingredients

  • Turai/ Ridge gourd - 1 & 1/2
  • Oil - 2 tablespoon
  • Rai/ Mustard seeds - 1 teaspoon
  • Urad dal/ Split black gram - 1 teaspoon
  • Haldi powder/ Turmeric powder - 1/4 teaspoon
  • Hing/ Asafoetida - a pinch
  • Hari mirch/ Green chilli - as per taste slit
  • Curry patta/ Curry leaves - 7 to 8 leaves
  • Moong dal/ Yellow gram - 1 cup
  • Fresh Nariyal/ Coconut - 1/2 cup grated
  • Dhaniya patta/ Coriander leaves - a handful finely chopped
  • Salt - as per taste

Instructions

  1. Wash the moong dal thoroughly and then soak it in water for 40 minutes.
  2. Peel only the sharp portions of ridge gourd with the peeler and then grate it with the peel.
  3. Heat oil in a pan and add mustard seeds, urad dal, turmeric powder, asafoetida, green chilli, and curry leaves to it and sauté them for about a minute.
  4. Add grated ridge gourd to the pan and mix it well with the other ingredients.
  5. Add salt and soaked moong dal to the pan and mix them well.
  6. Add coconut to the pan and mix it well.
  7. Add coriander leaves to the pan and mix them well. Cover the pan and let it cook for about 2 minutes.
  8. Turai Ki Sabzi | Beerakaya Pesara Pappu is ready to be served.
