Whole Wheat Kulcha | Gehu ke aate ka Kulcha is popular street food from Punjab.

Whole Wheat Kulcha | Gehu ke aate ka Kulcha is a popular Indian flatbread from north India, especially Punjab. They are very famous in Amritsar and Delhi. This soft textured kulcha is easy to prepare and taste delicious when served with chole or any paneer curry. It can be made in the tandoor as well as on a pan or griddle. Generally, it is prepared from maida but we used here whole wheat flour to make it more healthy. Try to prepare the delicious and healthy kulcha and enjoy it with family and friends. Tips and Suggestions by Mom Chef:-

  • It is recommended to use homemade fresh curd for preparing the dough.
  • Make sure, to cover the dough with the muslin cloth or kitchen towel and allow it to rest for 30 minutes.
  • Kulcha of any desired size can be prepared.
  • Instead of yeast, curd and baking soda are used to leaven the bread.
  • It should be served hot or warm for a better taste.

Ingredients

  • Gehu ka atta/ Whole wheat flour - 1 cup
  • Namak/ Salt - a pinch
  • Baking soda - 1/4 teaspoon
  • Fresh Dahi/ Curd (room temperature) - 3 tablespoons or as required
  • Oil - as required
  • Water (room temperature) - as required
  • Kalongi/ Nigella seeds/ Onion seeds - as required
  • Dhaniya patta/ Coriander leaves - finely chopped as required
  • Ghee/ Clarified butter - as required

Instructions

  1. In a bowl, add and mix properly whole wheat flour, salt, and baking soda.
  2. Now, prepare a medium to soft dough by adding curd little by little.
  3. Sprinkle some oil and knead it gently.
  4. Thereafter, cover it with a muslin cloth or a kitchen towel and allow it to rest for 30 minutes.
  5. Take a small portion of the dough and dust it with whole wheat flour.
  6. Using a rolling pin, flatten the dough into round shape on a rolling board. Keep it thick.
  7. Now, brush with water on the top side and sprinkle kalonji and press it gently.
  8. Sprinkle some coriander leaves and press it gently.
  9. Heat a pan and place the kulcha on it while making sure that the topped kalonji side remains on the top. Keep the flame medium to high.
  10. After a few minutes, flip the kulcha gently and apply ghee on it.
  11. Flip it again and again until it cooks properly and evenly.
