  • FOR PREPARING MIRCHI KE TIPORE :
  • You can use any type of green chilli.
  • Keep the green chilli crunchy.
  • If you want, you can cook the green chilli by covering the pan with a lid.
  • FOR PREPARING ONION TOMATO SABJI : 
  • The consistency of the sabji should be thick, if you want to serve it as chutney.

Ingredients

  • FOR PREPARING ONION TOMATO SABJI : 
  • Oil - 1 tbsp
  • Cumin Seeds / Jeera - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Garlic / Lahsun - 3 to 4 Cloves crushed
  • Onion / Pyaz - 1 Chopped
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Coriander Powder / Dhaniya Powder - 1 tsp
  • Salt - As per taste
  • Tomato / Tamatar - 1 Finely chopped
  • Water = As required
  • Coriander Leaves / Hara Dhaniya - A handful + For garnishing
  • FOR PREPARING MIRCHI KE TIPORE :
  • Mustard Oil / Sarso Ka Tel - 2 tbsp
  • Green Chili (large and thick) / Hari Mirchi - 1 Cup chopped
  • Mustard Seeds / Rai - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Salt - As per taste
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Coriander Powder / Dhaniya Powder - 3 tsp
  • Cumin Seeds Powder / Jeera Powder - 1 tsp
  • Fennel Seeds / Saunf - 1/4 Cup coarsely ground
  • Dry Mango Powder / Amchur - 1 tsp
  • FOR PREPARING LACHHA PARATHA :
  • Whole Wheat Dough / Gehu Ka Aata - As required
  • Clarified Butter / Ghee - As required
  • Whole Wheat Flour / Gehu Ka Aata - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING ONION TOMATO SABJI : 
  2. Heat oil in a pan. Add cumin seeds, asafoetida, garlic, and onion. Mix well.
  3. Then add turmeric powder, red chilli powder, coriander powder, and salt. Mix well.
  4. When the oil separates, add tomato and mix well. Add a little water and mix well. Saute it for 2 minutes on medium flame. Keep stirring occasionally.
  5. Then add a little water and mix well. Garnish it with coriander leaves. Take it out in a serving bowl.
  6. FOR PREPARING MIRCHI KE TIPORE :
  7. Heat mustard oil in a pan. Add mustard seeds, asafoetida, and green chilli. Mix well.
  8. Add salt, turmeric powder, red chilli powder, coriander powder, cumin seeds powder, fennel seeds, and dry mango powder. Mix well.
  9. Saute it for a few seconds on medium flame. Then turn off the flame. Take it out in a bowl.
  10. FOR PREPARING LACHHA PARATHA :
  11. Take a small ball sized wheat dough and make a round shaped circular peda from the dough. Dust it with flour and roll a peda to make a paratha.
  12. Apply ghee to it. Sprinkle whole wheat flour on it. Now, take one side of the paratha and fold it one upon another, as if folding to make a fan, then prepare a roll from it.
  13. Then roll it over to make a circle and press it with your hands. Dust it with flour. Then roll it with light hands to make a paratha
  14. Meanwhile, heat a tawa. Grease it with ghee. Place the prepared paratha on the tawa. Cook it from one side.
  15. Flip it once it is slightly brown, Apply ghee to the paratha and cook it from both sides on a low to medium flame. Press the paratha while cooking it to make it crispy.
  16. Once done. Take it out to the serving plate.
  17. 'Winter Special Thali Episode – 6' is ready to be served with onion, green chilli, curd, and papad.
