Zafrani Pulav | Hyderabadi Zafrani Pulao is a mouthwatering rice preparation from the Nawabi cuisine.

Zafrani Pulav | Hyderabadi Zafrani Pulao is a very rich rice preparation with the lip-smacking flavour of saffron, some whole spices and dry fruits. Zafran means Saffron in the Urdu Language. This pulao/pulav is very famous in Hyderabad. This rice is famous for its unique taste which comes from whole spices, dry fruits and saffron. It is little sour, sweet and mildly spicy preparation. Hence, it is suitable for all age groups. This is very quick and easy to make with the ingredients easily available in the kitchen. This is served with a dollop of butter and lots of saffron milk which makes it more aromatic and tasty. So, try to make this pulao at your end and let us know how you liked it.

Tips and Suggestions by Mom Chef:-

  • The whole spices are important for flavouring. So, do not avoid it.
  • Traditionally, this rice is prepared in ghee/clarified butter only. So, use ghee to make the dish flavourful and rich.
  • While adding the cooked rice in a pan, switch off the gas. This will make the rice fluffier and rice grains will not break.
  • While serving, add the saffron milk and a dollop of butter. Butter makes it more aromatic and enhances the flavour too. And add fried onions on the top.

Ingredients

  • Basmati Rice - 1 Cup cooked
  • Sour Curd - 4 Teaspoon
  • Saffron - 10 to 15 strands soaked in milk
  • Butter - as required
  • Ghee/Clarified Butter - 1 & 1/2 Tablespoon
  • Garlic Paste - 1 Teaspoon
  • Onion - 1 Small sized sliced
  • Mint Leaves - a handful
  • Coriander Leaves - a handful
  • Black Pepper corns/Kali Mirch - 8 to 10
  • Green Cardamom/Hari Elaichi - 2
  • Bay Leaf/Tej Patta - 1
  • Cloves/Laung - 2
  • Dalchini/Cinnamon - small stick
  • Cashew Nuts/Kaju - 4 to 6
  • Almonds/Badam - 4 to 6
  • Raisins/Kishmish - 4 to 6
  • Roasted Cumin powder - 1/2 Teaspoon
  • Coriander powder - 1/2 Teaspoon
  • Fried Onions - as required for garnishing

Instructions

  1. Heat ghee/clarified butter in a kadai or pan.
  2. Add bay leaves, black pepper corns, cloves, green cardamom. Saute for few seconds.
  3. Then add almonds and cashew nuts. Saute for few seconds. Then add raisins and saute for 2 to 3 seconds.
  4. Now, add garlic paste then sliced onion. Saute until the onion turns translucent.
  5. Add roasted cumin powder, coriander powder and mix well. Then add beaten curd to it. Mix well and stir it continuously. Cook it for a minute.
  6. Add mint leaves and coriander leaves. Mix well and cook until they shrink. (do not chop the leaves) Then switch off the gas.
  7. Finally, add cooked basmati rice. Toss it lightly.
  8. SERVING : Take a serving plate and add rice. Pour the saffron milk on the top. Add a dollop of butter and fried onions.
  9. Delicious 'Zafrani Pulav | Hyderabadi Zafrani Pulao' is ready to be served.
