Aloo Ki Sabzi – UP Famous Sabzi is lip-smacking breakfast and brunch.

Aloo Ki Sabzi – UP Famous Sabzi with Bedmi Poori is an irresistible combination. This is a famous meal famous in Northern part of India. Aloo ki sabzi is a flavourful curry of potato. This is very simple yet amazingly yummy. You can make this famous street food at your end by following this recipe. All family members will love this sabzi.   • Adding roasted gram flour/besan makes the gravy thick as well as add flavour to the curry.
  • Mash the potato with hands.
  • Adjust the consistency as per your choice.

Ingredients

  • Aloo/Potato - 4 boiled and mashed
  • Tomato - 2 pureed
  • Grated ginger - 1 Teaspoon
  • Green Chilli - 1 chopped
  • Laung/Cloves - 4
  • Asafoetida/Hing - a pinch
  • Bay Leaf - 1
  • Dry red chilli - 1
  • Crushed Fennel seeds - 1 Teaspoon hipped
  • Cumin Seeds - 1 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1 Teaspoon
  • Roasted besan/Gram Flour - 1 Teaspoon
  • Turmeric Powder - 1/2 Teaspoon
  • Red Chilli Powder - 1 Teaspoon
  • Coriander powder - 1 Tablespoon
  • Salt - as per taste
  • Oil - 3 Tablespoon
  • Coriander Leaves - as required for garnishing

Instructions

  1. Boil the potato. Peel and mash roughly with hands.
  2. Dry roast the gram flour until it is aromatic.
  3. Heat oil in a pan.
  4. Add cloves, asafoetida, bay leaf, dry red chilli, crushed fennel seeds, cumin seeds. Saute it for few seconds.
  5. Add grated ginger and chopped green chilli. Saute it for a minute. Then add kasuri methi and saute.
  6. Now, add roasted gram flour and saute it for few seconds. Then add turmeric powder, red chilli powder and coriander powder. Saute it for half a minute.
  7. Add tomato puree and cook it until the oil leaves from the side. Add salt and cook.
  8. Add mashed potato to it. Mix well and cook for a minute.
  9. Add 2 Cup of water. Mix well. Cover and cook it for about 10 minutes. Check it in between. Once cooked, switch off the gas. Transfer to a bowl and garnish with coriander leaves.
  10. Delicious 'Aloo Ki Sabzi - UP Famous Sabzi' is ready to be served with Bedmi Poori.
