Aloo Pyaaz Ki Sabzi

Aloo Pyaaz Ki Sabzi is a delicious and simple sabzi from the Rajasthani cuisine.

Aloo Pyaaz Ki Sabzi is a quick and easy yet a mouthwatering preparation. This uses very simple ingredients like onion, potato, tomato and some spices. The taste of this enhances when combining with Rajasthani famous Khoba Roti. It is a colourful sabzi and very healthy too. It is a good option for the summer season and when you have a shortage of green veggies. This is a perfect last minute idea for lunch and dinner as well. You will love this flavourful sabzi. So, try to make this sabzi at home and enjoy with your loved ones.

This Sabzi was prepared by a lovely Chef – Komal Goyal from Rajasthan.

Tips and Suggestions by Mom Chef:-

  • Dip the chopped potato in the water to prevent them from turning black (oxidize).
  • You can add spices according to your taste and choice.
  • Initially, saute the onion and potato on a high flame then lower the flame to get non-sticky sabzi.
  • Serve this sabzi with Khoba Roti | Rajasthani Khoba Roti.

Ingredients

  • Onion/Pyaaz - 2
  • Potato/Aloo - 2
  • Tomato - 1 diced
  • Bay leaf/Tej patta - 1
  • Dry Red Chilli - 1
  • Cumin seeds - 1/2 Teaspoon
  • Red Chilli powder - 1/2 Teaspoon or as per taste
  • Turmeric powder - 1/4 Teaspoon
  • Coriander powder - 1/2 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Pudina Powder/Dry Mint Powder - a pinch
  • Garam Masala/All spice Mix - a pinch
  • Salt - as per taste
  • Sesame oil/Til Ka Tel - 2 Tablespoon

Instructions

  1. Slice the onion. Peel and chop the potato in long pieces. Keep them in water.
  2. Heat oil in a kadai. Add cumin seeds then bay leaf.
  3. Add chopped onion and potato. Saute it on a high flame for a couple of minutes. While sauteing add dry red chilli, salt and turmeric powder. Mix and saute.
  4. Cover and cook for approximately 3 to 4 minutes on a medium-low flame.
  5. Then add red chilli powder, coriander powder. Mix well and cook. Cover and cook for 2 more minutes
  6. Add chopped tomato and mix well. Add kasuri methi, dry mint powder, garam masala. Mix well. Then cover and cook until the potato gets cooked.
  7. Once done, switch off the gas. Transfer to a serving bowl.
  8. Delicious 'Aloo Pyaaz Ki Sabzi' is ready to be served.
