Aloo Shimla Mirch Ki Sabji | Potato Capsicum Sabji is simple and easy to prepare with capsicum, potato, and spices. The crunch of capsicum and the flavor of spices make the sabji more and more delicious. This sabji is very quick to prepare, just stir-fry the capsicum and boiled potato with spices. Serve it with the phulka or roti or chapati or rice for lunch or dinner. You can also pack it in the tiffin box. Try to prepare this delicious sabji and enjoy it with family and friends. Ingredients

  • Oil - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Fennel seeds - 2 teaspoons
  • Grated ginger - 1/2 teaspoon
  • Hing/ asafoetida - a pinch (optional)
  • Bay leaf - 2
  • Tomato - 3 medium-sized, finely chopped
  • Turmeric powder - 1/2 teaspoon
  • Salt - as required
  • Red chili powder - 1 teaspoon or as required
  • Capsicum - 2 big-sized, chopped
  • Potato - 5 to 6
  • Roasted cumin seeds powder - 1 teaspoon
  • Coriander powder - 2 teaspoons
  • Coriander leaves - as required, finely chopped

Instructions

  1. Peel the potatoes and take 4 to 5 whistles to boil the potatoes. Chop the boiled potato and keep it aside.
  2. Heat oil in a pan and add cumin seeds, mustard seeds, fennel seeds, ginger, hing, bay leaf, and tomato. Saute well on a medium flame.
  3. Add turmeric powder, salt, and red chili powder. Saute well.
  4. Add capsicum and potatoes. Saute well on a medium flame.
  5. Now, add roasted cumin seeds powder and coriander powder. Saute for a few seconds.
  6. Lastly, garnish it with the coriander leaves and turn off the flame.
  7. Delicious Aloo Shimla Mirch Ki Sabji | Potato Capsicum Sabji is ready to be served.
