Baingan Ki Chutney In South Indian Style | Brinjal Chutney is an amazing chutney prepared from the brinjal. South Indian cuisine is renowned for its variety of chutneys and dips which gives a nice flavor. There are many health benefits of brinjals as it has many essential vitamins and minerals along with being a good source of dietary fibre. Serve it with roti or rice or paratha or bajra roti or jowar roti. Try to prepare this healthy recipe and enjoy it with family and friends. Do share your feedback in the comment section.

Tips and Suggestions by Mom Chef:-

  • If you do not have mustard oil, you can use sesame oil instead.
  • Use small-sized brinjal and cut it into small pieces to cook it faster.
  • Do not overcook the brinjal.
  • If you do not have urad dal, you can skip it. This chutney tastes equally nice with chana dal as well
  • Stir the masala continuously to avoid burning.
  • Allow the baingan and the masala to cool down before grinding them.
  • Add jaggery if you like a little sweetness in the chutney.
  • You can coarsely ground or make a fine paste of the chutney, as per your requirement.

Ingredients

  • Sarso ka Tel/ Mustard oil - 2 tablespoons
  • Hing/ Asafoetida - a pinch
  • Brinjal/ Baingan - 2
  • Hari Mirch/ Green chili - 2 slit
  • Whole Urad dal/ Husked Black gram - 1 teaspoon
  • Chana dal/ Split Chickpea - 1 teaspoon
  • Curry Patta/ Curry leaves - 10 to 15
  • Sabut Dhaniya/ Whole Coriander seeds - 1 teaspoon
  • Jeera/ Cumin seeds - 1 teaspoon
  • Methi seeds/ Fenugreek seeds - 1/2 teaspoon
  • Imli/ Tamarind/ - 2 small pieces
  • Sukhi Laal Mirch/ Dry Red chili - 4
  • Namak/ Salt - as required
  • Haldi powder/ Turmeric powder - 1/2 teaspoon
  • Gud/ Jaggery - as required (optional)
  • Sarso/ Mustard seeds - 1 teaspoon

Instructions

  1. Wash and the dry brinjal properly. Cut it into small pieces and keep it aside.
  2. Heat oil in a pan and sauté hing, brinjal, and green chilli on a medium flame.
  3. Meanwhile, heat another pan and sauté urad dal, chana dal, curry leaves, coriander seeds, cumin seeds, methi dana, tamarind, and red chilli on a low to medium flame until the masala emanates a nice aroma.
  4. Make sure to continuously stir it for 3 to 4 minutes.
  5. In between, stir the brinjal occasionally. Add salt, turmeric powder, and cover it. Do not overcook it.
  6. Turn off the flame and allow the masala and the brinjal to cool down.
  7. Now, transfer whole roasted masala to the mixer jar and coarsely grind it.
  8. Thereafter, spread it over the brinjal and mix it properly and again transfer the brinjal coated with the masala in the mixer jar.
  9. Add jaggery and grind it roughly again. Transfer it to a bowl.
  10. Now, heat oil in a pan and add mustard seeds, red chilli, hing, turmeric, and curry leaves. As it splutters, turn off the flame and transfer it over the baingan chutney.
  11. Delicious Baingan Ki Chutney In South Indian Style | Brinjal Chutney is ready to be served.
