Bhakri Na Ladoo | Churma Laddu is a famous Gujarati dessert.

Bhakri Na Ladoo | Churma Laddu is a healthy and low-calorie sweet dish. This modak recipe takes minimum time to make and is simple to make during festive seasons. In the traditional method of making ladoo from whole wheat flour, we fry the muthiya. But this ladoo is prepared from roasted bhakhri(like thick roti). Prepare this recipe on Ganesh Chaturthi and make your festival special with your family. Tips and suggestions by the Mom Chef:

  • Press the dough ball’s border with your thumb and fingers to remove cracks from the dough ball.
  • Make an indentation on bhakhri using a rolling pin to cook it well from inside.
  • The ratio of bhakhri powder to jaggery should be 1:Less than 1/2.
  • The sweetness can be adjusted as per taste.
  • Nutmeg powder will enhance the taste of ladoo.
  • If you do not have modak mold then you can make the ladoo with your hands.

Ingredients

  • Whole wheat flour / गेहूं का आटा - 1 Cup
  • Clarified butter / घी - 1 Teaspoon + 2 Teaspoons
  • Water / पानी - As required
  • Jaggery / गुड़ - Less than 1/2 cup
  • Mix dry fruits / सूखे मेवे - As required (almond, cashew, pistachios, raisins)
  • Cardamom powder / इलायची पाउडर - 1/4 Teaspoon
  • Nutmeg powder / जायफल पाउडर - 1/4 Teaspoon
  • Poppy seeds / खसखस - As required

Instructions

  1. Take whole wheat flour in a bowl. Add 1 Teaspoon of ghee and mix well. Now add water gradually to prepare medium hard consistency dough.
  2. Let it rest for 15 minutes. After 15 minutes make round shaped big circular peda from the dough. Press its border with your thumb and fingers to remove cracks from dough ball.
  3. Roll a peda to make a bhakhri (like thick roti). Make indentation to it using a rolling pin to cook it well from inside.
  4. Meanwhile, heat a tawa. Place the bhakhri on it and cook it on one side on a medium flame. Flip it, once it is slightly brown.
  5. Cook on a high flame untill it becomes nice golden brown from both sides. Press the bhakhri while cooking to make it crispy.
  6. Once done, transfer it to a plate and let it cool down. Then make small pieces from it and transfer it to a grinding jar.
  7. Grind it on high speed for a few seconds to make a fine powder mixture. Take it out to the big bowl. Add dry fruits, cardamom powder, and nutmeg powder. Mix well and keep it aside.
  8. Meanwhile, heat 2 Teaspoons of ghee in a pan. Add jaggery. Mix well for 1 minute. Then turn off the flame. Now melt the jaggery by stirring it continuously.
  9. Once done add the melted jaggery to the bhakhri powder mixture. Mix well. Take a small ball sized mixture. Roll it in poppy seeds.
  10. Now take a modak mold then fill it with ladoo mixture. Remove excess mixture and de-mold it and keep it on a plate.
  11. 'Bhakri Na Ladoo | Churma Laddu' is ready to be served.
