Bhindi Sambar | Okra Sambar

Bhindi Sambar | Okra Sambar is a mouthwatering side dish for South Indian food. 

Bhindi Sambar | Okra Sambar is a delicious and healthy dish. This is a flavourful dish using bhindi/lady’s finger and toor dal/pigeon peas. This is an authentic dish from Soth Indian cuisine and everyone loves and enjoys it. It is tangy, a little sweet in taste, and an aromatic sambar. This uses fresh homemade sambar powder which takes the dish to the next level. You can serve this sambar with Idli, Dosa, Medu Vada, or even with rice. It tastes amazing in all forms. So, try to make this traditional recipe and enjoy it with your family and friends. Do share your feedback as well.

Tips and Suggestions by Mom Chef:-

  • If you want, you can use other veggies such as pumpkin, radish/mooli, and drumsticks instead of ladyfinger. Or you can make mix veg sambar.
  • You can adjust the tanginess according to your taste by adjusting the quantity of tamarind puree. To make the puree, soak the tamarind in water for some time and then squeeze it to remove the pulp. Use this puree to make a sambar.
  • Adding jaggery enhances the flavor of sambar.
  • Keep the consistency of the sambar a little watery because it becomes thick after some time.
  • Make this sambar using fresh Sambar POwder | Homemade Sambar Masala.

Ingredients

  • Toor Dal/Pigeon Peas - 2 Cup
  • Bhindi/Okra/Lady Finger - 200 Gram
  • Carrot - 1 chopped
  • Tomato - 2 + 1/2
  • Dry Red Chilli - 2
  • Curry Leaves - few
  • Mustard seeds - 1/2 Teaspoon
  • Asafoetida/Hing - a pinch
  • Sambar Masala - 1 Teaspoon + 1 & 1/2 Teaspoon
  • Tamarind puree - 1/2 Cup or as per taste
  • Fresh coconut - 2 Tablespoon chopped
  • Jaggery/Gud - 1 Teaspoon or as per taste
  • Salt - as per taste
  • Oil - 1 to 2 Tablespoon
  • INGREDIENTS FOR TADKA:-
  • Ghee/Clarified butter - 2 Teaspoon
  • Urad Dal/Black gram - 1/4 Teaspoon
  • Mustard Seeds - 1/2 Teaspoon
  • Curry Leaves - few
  • Hing/Asafoetida - 1/2 Teaspoon
  • Turmeric powder - 1/4 Teaspoon

Instructions

  1. In a pressure cooker, add pigeon peas, 4 cups of water, and 2 chopped tomatoes. Pressure cook on a medium flame for 4 whistles. Then let it cool completely.
  2. Now, heat oil in a pan or kadai.
  3. Add mustard seeds, urad dal/black gram without skin, and asafoetida.
  4. Then, add curry leaves and dry red chillies. Saute for a few seconds.
  5. Add chopped okra/bhindi/ladyfinger. Saute it on a medium flame. Cook it for 3 to 4 minutes.
  6. After 2 to 3 minutes add chopped carrot and mix well.
  7. Add salt and sambar powder. Mix well and cook for a minute.
  8. Meanwhile, take a grinder jar. Add tamarind puree, 1/2 tomato, fresh coconut, jaggery, and 1 & 1/2 teaspoon sambar masala. Grind it to make a smooth paste.
  9. Add the above paste to the pan. Mix well and cook. Add a little water to the jar and add that to the pan. Cover and cook for a minute.
  10. Add cooked pigeon peas and add water to adjust the consistency. Add a little salt. Mix well.
  11. Add chopped coriander leaves and let it boil.
  12. Meanwhile, prepare the tadka. Heat ghee in the tadka pan. Add mustard seeds, urad dal/black gram without skin, asafoetida, curry leaves and turmeric powder. Pour this tadka on the sambar.
  13. Mix well and turn off the flame. Transfer to a serving bowl.
  14. Delicious 'Bhindi Sambar | Okra Sambar' is ready to be served.
