Ingredients

  • FOR PREPARING CHUTKI WALI ROTI :
  • Whole Wheat Dough / Gehu Ka Aata - As required
  • Clarified Butter / Ghee - As required
  • Salt - As per taste
  • Red Chilli Powder / Lal Mirch Powder - As required
  • Turmeric Powder / Haldi Powder - As required
  • Coriander Powder / Dhaniya Powder - As required
  • Cumin Seeds / Jeera - 1/2 tsp
  • Coriander Leaves / Hara Dhaniya - A handful
  • Green Chilli / Hari Mirch - 1 to 2 Finely chopped
  • Butter - As required
  • FOR PREPARING PYAZ KA ACHAR :
  • Baby onion / Pyaz - 12 - 14
  • Mustard Oil / Sarso Ka Tel - 2 to 3 tbsp
  • Salt - As per taste
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Green Chilli / Hari Mirchi - 2 Slit
  • Asafoetida / Hing - 1/4 tsp
  • Cumin Seeds / Jeera - 1/2 tsp
  • Fennel Seeds / Saunf - 1/2 tsp
  • Onion Seeds / Nigella Seeds / Kalonji - 1/4 tsp
  • Dry Fenugreek Seeds / Dana Methi - 1/4 tsp
  • Mustard Seeds / Rai - 1/4 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING CHUTKI WALI ROTI :
  2. Take a medium ball sized wheat dough and make a round shaped circular peda from the dough. Dust it with flour and roll a peda to make a paratha.
  3. Apply ghee to it. Then sprinkle salt, red chilli powder, turmeric powder, coriander powder, cumin seeds, coriander leaves, and green chilli.
  4. Then prepare a roll from it. Then roll it over to make a circle and press it with your hands. Dust it with flour and roll it with light hands to make a paratha.
  5. Meanwhile, heat a tawa. Place the prepared paratha on the tawa. Cook it from one side.
  6. Flip it and cook it from another side. When the roti is half cooked, take it out to a plate and pinch up on the roti using tongs or hand's thumb and fingers.
  7. Put the plain side again on the tava. Cook it. Then take it out on the direct flame and cook it from both sides.
  8. When it is completely cooked, take it out on a serving plate and apply butter to it.
  9. FOR PREPARING PYAZ KA ACHAR :
  10. Take peeled onions. Make 2 slits like a cross on each one so that the base stays attached. Likewise, prepare all onions.
  11. Take them out in a bowl. Add salt, turmeric powder, red chilli powder, and green chilli.
  12. Meanwhile, heat mustard oil in a tadka pan. Add asafoetida, cumin seeds, fennel seeds, onion seeds, dry fenugreek seeds, and mustard seeds.
  13. Pour the prepared tadka into the onion bowl and mix well.
  14. 'Chutki Wali Roti With Pyaz Ka Achar' is ready to be served.
