Ingredients

Prunes, apricots, cranberries, tutti frutti, and raisins (black and green) - as required, finely chopped
Orange juice (fresh) - as required to soak the dry fruits.
Sugar - 1 teaspoon for juice and 6 tablespoons for caramelized
Maida/ all purpose flour - 1(1/2) cup
Cocoa powder - 1 tablespoon
Baking soda - 1/4 teaspoon
Baking powder - 1 teaspoon
Dry ginger powder/ sonth powder - 1/4 teaspoon (optional)
Jaifal powder/ Nutmeg powder - 1 teaspoon
Dry fruits (almond, cashew, and walnuts) - 1/4 cup, finely chopped for the batter and as required for garnishing
Oil - 1/2 cup for the batter and as required for greasing
Curd (fresh) - 1/2 cup
Powdered sugar - 1/2 cup
Vanilla essence - 1 tablespoon
Lukewarm water - 6 tablespoons
Milk - 1 tablespoon

Instructions

In a glass jar add prunes, apricots, cranberries, tutti frutti, and raisins (black and green). Now, add orange juice. ( pour juice until dry fruits completely submerged. )
Add sugar and allow it to rest for overnight or 12 hours in the refrigerator.
After that, shake the jar and strain the dry fruits. Keep it aside.
In a heavy-bottomed pan, add sugar and continuously stir it until the sugar melts on a medium to high flame.
As the sugar melts the color change. When the bubbles start to arise, immediately add lukewarm water and stir it continuously. Keep it aside and allow it to cool down.
Preheat the OTG at 180 degrees Celsius for 10 minutes.
Dry ingredients: In a bowl, add maida, cocoa powder, baking soda, baking powder, ginger powder, jaifal powder, and dry fruits. Mix it and keep it aside.
Wet ingredients: In a large bowl, add oil, curd, powdered sugar, and vanilla essence. Whisk it properly.
Now, add soaked dry fruits and mix it properly.
Add above-prepared caramelized sugar and dry ingredients. Whisk it properly.
If the batter is too thick then add 1 tablespoon of milk. Mix it with a spatula using the cut and fold method (gather the mixture and then mix it from between). Keep the consistency of the batter thick.
Take a loaf tin and grease it with the oil. Place the butter paper on all sides and grease it with the oil.
Pour the batter and flatten it. Tap it to prevent it from sinking.
Now, garnish it with the dry fruits and tutti frutti.
After that, place the loaf tin in it and set the OTG at 160 degrees Celsius for 50 minutes.
Take the tin out and check the cake by placing the toothpick in the center of the cake. If the cake does not stick to the toothpick, that means the cake baked properly.
Now, allow it to rest for 10 minutes.
Flip the tin on a plate and tap it. Demould the cake and remove the butter paper.
Now, place it on a cooling rack and cover it properly with the wet cloth for 5 to 6 hours.
After that, you can cut it into equal pieces.
