Khaman Dhokla | Instant Besan Dhokla a  Gujarati snack very popular across India.

Khaman Dhokla | Instant Besan Dhokla is a soft, spongy savoury cake. This instant recipe requires gram flour, green chilli, fruit salt and a tempering of mustard seeds and curry leaves. This is spicy, little sweet in taste. It is a favourite of my daughter and Its been 10 years now that I have been making it as a breakfast dish for my family. It’s not only very tasty but can also be easily cooked. So, try it out soon and don’t forget to share the feedback 🙂

Tips and Suggestions by Mom Chef:-

  • This is an instant recipe requires fruit salt which must be added to the batter immediately before putting the batter in the steamer to get soft and spongy dhokla.
  • To steam the dhokla, the mould should be put in the steamer only after the water in the steamer starts boiling.
  • Citric acid can be replaced with lemon juice.
  • The dhokla should be demoulded only after it cools down completely.

Ingredients

  • Besan or Gram flour - 1 cup
  • Semolina/Rava/Sooji - 1 Tablespoon
  • Powdered Sugar - 1 Tablespoon
  • Vegetable oil - 2 Teaspoon + for greasing the pan
  • Fruit salt (Eno) – 1 Teaspoon
  • Taatri /Citric acid - 1/2 teaspoon
  • Salt - to taste
  • Haldi powder/Turmeric powder - 1/4 teaspoon
  • Water - 1 cup
  • INGREDIENTS FOR TADKA:-
  • Oil - 1 Tablespoon
  • Mustard seeds/Rai - 1 Teaspoon
  • Curry leaves - a few
  • Water - 1/2 to 1 Cup
  • Lemon/Nimbu - 1
  • Sugar - 1 Teaspoon
  • Green chilli - 2 to 4 long cut pieces
  • Coriander leaves - as required for garnishing

Instructions

  1. Boil water in a steamer.
  2. Take a bowl and add gram flour, semolina, powdered sugar, citric acid, salt, fruit salt and vegetable oil. Mix well and add water in batches to make a semi thick batter. The batter should neither be too thick nor too thin.
  3. Grease a mould with oil.
  4. Transfer this batter immediately to a round deep pan and place the pan in the steamer. Steam for 12 to 15 minutes .
  5. Insert a knife to check whether it is properly cooked. If the knife comes out clean then the dhokla is perfectly cooked.
  6. Now take it out of steamer and put it aside for cooling. Then de-mould it.
  7. For the tadka, heat oil in a deep pan and add oil to it. Once it becomes hot, add mustard seeds.
  8. Now add lots of curry leaves and green chilli to it.
  9. Now add 1 cup water in the pan. Bring it to a boil and add sugar. Let it boil for a minute then switch off the gas. Then add lemon juice to it.
  10. Now, pour this tadka with a big spoon on all the dhokla. Garnish it with coriander leaves.
  11. Soft, spongy and tasty 'Khaman Dhokla | Instant Besan Dhokla' is ready to be served with green chutney.
