Khaman Dhokla | Instant Gujarati Khaman is a famous snack.

You can prepare Khaman Dhokla | Instant Gujarati Khaman in your kitchen from gram flour and some spices. It has a nice soft and spongy texture. It is everyone’s favorite snack, especially with green coriander chutney. We have prepared it instantly with fruit salt. You need only a few ingredients to make this yummy dish and requires only 15 minutes to get ready. You can make fluffy dhokla very easily at home by following simple tips and tricks. This can be a good evening snack or tiffin snack too. So, try this recipe in your kitchen and share your valuable feedback with us.

Tips and Suggestions by the Mom Chef :

  • You can add lemon juice or curd instead of citric acid.
  • The ratio of water to gram flour should be 1:1.
  •  Mix the batter well with a beater/whiskers for 4 to 5 minutes to make soft and spongy khaman.
  • The khaman should be put in the steamer for steaming only after the water boils.
  • If desired, 1 Tablespoon fine sooji can be added with gram flour.
  • Insert a toothpick/knife to check khaman. If it comes out clean then it is cooked perfectly.
  • Add fruit salt just before steaming the khaman.

Ingredients

  • Gram flour / Besan - 1 Cup
  • Salt - As per taste
  • Citric acid / Taatri - 1/2 teaspoon
  • Powdered sugar - 1 Tablespoon
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Oil - 1 Tablespoon + For greasing
  • Water - 1 Cup
  • Fruit salt - 1 Teaspoon
  • FOR PREPARING TADKA :
  • Oil - 1 Tablespoon
  • Mustard seeds / Rai - 1 Teaspoon
  • Green chilli / Hari mirchi - 4 to 5 Slited
  • Curry leaves / Curry patta - A few
  • Water - 2 Cups
  • Roasted sesame seeds / Til - 1 Teaspoon
  • Salt - As per taste
  • Sugar - 2 Teaspoons
  • Lemon Juice - Of 1/2 lemon

Instructions

  1. Take gram flour in a big bowl. Add salt, citric acid, powdered sugar, turmeric powder, and oil. Mix well.
  2. Then add water gradually to prepare the lumps-free batter. Mix the batter well with a beater/whiskers for 4 to 5 minutes.
  3. Add fruit salt to the batter. Add water to the fruit salt. Mix well. Grease a mould with oil.
  4. Transfer the batter immediately to a greased mould. Tap it.
  5. Meanwhile, boil water in a steamer. The khaman should be put in the steamer for steaming only after the water boils.
  6. Place the mould in the steamer. Steam it on a medium flame for 12 to 15 minutes.
  7. After 15 minutes, insert a toothpick to check. If it comes out clean then it is perfectly cooked. Else steam it for 2 to 3 minutes more.
  8. Now take it out from the steamer. Keep it aside and let it cool down. Then de-mould it and cut it.
  9. FOR PREPARING TADKA :
  10. Heat oil in a pan. Add mustard seeds, green chilli, curry leaves, and water. Mix well.
  11. Then add salt, sugar, and sesame seeds. Mix well. Boil it. Then turn off the gas. Add lemon juice.
  12. Pour tadka on the steamed khaman.
  13. 'Khaman Dhokla | Instant Gujarati Khaman' is ready to be served with green chutney.
