Khasta Moong Dal Kachori With Green Chutney

Ingredients

Oil - 2 tablespoons
Cumin seeds - 1 teaspoon coarsely ground
Fennel seeds - 1 teaspoon coarsely ground
Coriander seeds - 1 teaspoon coarsely ground
Ginger paste - 1 teaspoon
Green chili - 1 finely chopped
Besan/ gram flour - 3 tablespoons
Maida/ all purpose flour - 2 bowls
Carom seeds/ ajwain - 1 teaspoon
Salt - as required
Ghee/ clarified butter - as required
Water - as required
Turmeric powder - 1/2 teaspoon
Red chili powder - 1/2 teaspoon
Black salt - 1/4 teaspoon
Coriander powder - 1 teaspoon
Moong dal/ split and husked moong lentils - 1/2 bowl
Garam masala/ all spice mix - 1/2 teaspoon
Amchur powder/ dry mango powder - 1/2 teaspoon
Kasuri methi/ dry fenugreek leaves - 1/2 teaspoon
Coriander leaves - a fistful
Green chili - 1
Green capsicum - 8 to 10 small pieces
Lemon juice - 1/2 lemon
Sugar - a pinch

Instructions

Take all-purpose flour (maida), carom seeds, and salt in a bowl and mix it very well.
Now, crumble the flour well with ghee.
Add water in parts and knead the dough. The dough should be of medium consistency, not very hard or soft.
Cover the dough with a moist muslin or kitchen towel and let it rest for 10 to 15 minutes.
Rinse moong dal in a bowl. Soak moong dal with enough water for 2 hours.
Later drain all the water very well and add the soaked moong dal in a grinder jar.
Grind it to a roughly coarse mixture and keep it aside.
Heat oil in a pan. Add cumin seeds, fennel seeds, coriander seeds, ginger paste, and green chili. Saute it well on the low flame.
Add besan and saute it well.
Meanwhile, preheat the air fryer at 180 Degrees Celsius for 10 minutes.
Now, add turmeric powder, red chili powder, salt, black salt, and coriander powder. Saute it well.
Further, add roughly coarse moong dal and saute it well for 3 to 4 minutes on low to medium flame.
Add garam masala, amchur powder, and kasuri methi (crush it in between the hands before adding it). Saute it for 2 minutes and allow it to cool down.
Now make small balls from this moong dal mixture and keep it aside.
Further, take the dough and kneed it once. Pinch a small-sized ball and flatten it.
Now scoop a prepared moong dal ball as stuffing in the flattened portion.
Get the edges together and form a bundle.
Furthermore, gently press the edges and flatten it. Gently grease it with the oil.
Grease the air fryer grids with the oil and place the grease kachori in it.
Now, set the temperature of air fryer at 200 Degrees Celcius for 20 minutes.
Meanwhile, take coriander leaves in a mixer jar, add green chili, green capsicum, squeeze the lemon juice, add cumin seeds, black salt, sugar, and water. Grind it properly to a smooth paste.
