Kothimbir Vadi is a mouthwatering snack from Maharashtrian cuisine.

Kothimbir Vadi is a very popular and lovable snack. This uses kothimbir or dhaniya patta or coriander leaves, besan/gram flour and some spices. This has crispy texture from outside and soft from inside. It has a nice aroma of coriander leaves and it tastes amazing with any kind chutney. Moreover, this is very simple and easy to prepare with easily available ingredients. Everyone will love this snack. So, try to make this snack at home and enjoy with your loved loved ones. Tips and Suggestions by Mom Chef:-

  • You can add onion, garlic and ginger to make the vadi.
  • Instead of deep-frying you can shallow fry the vadi. But make sure the vadi is completely cool before frying.
  • Serve this vadi with Palak Chutney or Green Chutney.

Ingredients

  • Coriander Leaves/Dhaniya patta/Kothimbir - 1/2 Cup finely chopped
  • Besan/Gram flour - 1/2 Cup
  • Water - 1/2 Cup
  • Roasted and Crushed peanuts - 2 Tablespoon
  • Ajwain/Carom Seeds - 1/2 Teaspoon
  • Cumin/Jeera - 1/2 Teaspoon
  • Hing/Asafoetida - a pinch
  • Turmeric powder - 1/4 Teaspoon
  • Green Chilli paste - 1/2 Teaspoon or as per taste
  • Salt - as per taste
  • Lemon juice - 1/2 Teaspoon
  • Oil - 2 Teaspoon + for deep frying

Instructions

  1. Heat 2 teaspoon oil in a pan. Then add carom sees, cumin seeds, asafoetida, turmeric powder. Mix well. Then add green chilli paste and saute for few seconds.
  2. Add chopped coriander leaves. Mix well and saute for few seconds. Then add 1/2 cup water and roasted and crushed peanuts. Boil the water.
  3. Once the water is boiled, add besan/gram flour to it. Mix well to make it lumps free.
  4. Add salt, lemon juice. Mix well and cook for a minute. Then switch off the gas. Transfer the mixture to a greased plate.
  5. Meanwhile, heat water in a steamer or a big vessel. Put a stand.
  6. Put the plate in the steamer and steam it for about 15 minutes. Keep the flame high. Once done, take out the plate. Let it cool completely.
  7. Heat oil for deep frying.
  8. Cut kothimbir vadi into pieces. Then deep fry on a medium flame. Once it turns nice golden brown, take it out.
  9. Delicious 'Kothimbir Vadi' is ready to be served.
