Lauki Handvo is a yummy snack dish for everyone.

Lauki Handvo is a new type of snack. Handvo is a Gujarati delicacy. This is an easy and quick version of handvo dish. It requires easily available ingredients like suji, besan, curd, lauki, red chili powder, all spice mix powder. The tempering of mustard seeds and sesame seeds makes it more tasty. It tastes great with tomato sauce or green chutney. It is a healthy tea-time snack, enjoyable for kids and adults. So, try this recipe and let us know your feedback in the comment section.

Tips and Suggestions by Mom Chef:-

  • Wash, pat dry and grate the lauki.
  • If the curd is sour, then add 3/4 cup. While using fresh curd, take about 1 cup.
  • If you want you can add 1/4 teaspoon baking soda in place of fruit salt.
  • You can serve the dish with Green Chutney | Hari Chutney | Coriander Chutney

Ingredients

  • Bottle Gourd/Lauki - 200 grams grated
  • Semolina/Suji - 1 cup
  • Gram flour/Besan - 2 tablsepoon
  • Ginger-green chili paste/Adrak- Hari mirch paste - 1 teaspoon
  • Fresh curd/Dahi - 1 cup
  • Turmeric powder/Haldi powder - 1/ 4 teaspoon
  • Red chili powder/Lal mirch powder - to taste
  • Salt - to taste
  • All spice mix powder/Garam masala - 1/4 teaspoon
  • Coriander leaves - chopped a handful
  • Water - as required
  • Oil - 1 tablespoon
  • Mustard seeds/Rai - 1/2 teaspoon
  • Sesame seeds/Til - 1/2 teaspoon
  • Fruit salt - 1/2 teaspoon
  • Coriander leaves - to garnish

Instructions

  1. In a bowl, put the grated lauki, suji, besan and ginger-green chili paste. Then, add 3/4 cup of curd, turmeric powder, red chili powder, salt, all spice mix powder and coriander leaves.
  2. Mix well with the spoon. Add the remaining curd and mix well. Put water in small quantity and mix well. Rest the mixture for 15 to 20 minutes.
  3. If the consistency of the mixture is thick then add some water. Heat oil in a pan. Put mustard seeds, and sesame seeds.
  4. Put the fruit salt in the handvo mixture and mix well. Place the mixture in the pan, sprinkle sesame seeds and red chili powder.
  5. Cover and cook for 6 to 7 minutes from one side on low flame. After 6 to 7 minutes, flip the handvo on a plate.
  6. Then, flip again on the pan. Cook on medium flame for 1 to 2 minutes. Once ready, take it out on a plate and garnish with coriander leaves.
  7. The Lauki Handvo is ready to be served.
