Masala Arbi is a tasty sabji. 

Masala Arbi is an innovative and unique dish. This is quick and easy to prepare with easily available ingredients. Arbi is rich in nutrients. It is a good source of essential nutrients, dietary fiber, vitamins, and minerals. You can serve this sabji with roti or paratha as a lunch or dinner or in the lunch box of your family member. Tips and Suggestions by a Mom Chef:

  • Carom seeds should be added to the tadka to digest arbi well.
  • You can add boiled potato instead of arbi.
  • Grease your palms while peeling the boiled arbi to avoid sticking to your hands.
  • Always choose small sized round arbi.
  • You can use spice mixture for any dry sabji.

Ingredients

  • Mustard Oil / Sarso Ka Tel - 1 tbsp + As required
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Salt - As per taste
  • Coriander Powder / Dhaniya Powder - 2 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • All Spice Mix Powder / Garam Masala - 1/2 tsp
  • Dry Fenugreek Leaves / Kasuri Methi - 1 tsp
  • Dry Mango Powder / Amchur - 1 tsp
  • Water - As required
  • Asafoetida / Hing - A pinch
  • Carom Seeds / Ajwain - 1/2 tsp
  • Green Chilli / Hari Mirchi - 2 to 3 Slit
  • Colocasia Root / Arbi / Kachalu - 250 Gms.
  • Coriander Leaves / Hara Dhaniya - A handful
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING ARBI :
  2. Boil arbi in the pressure cooker till 1 whistle on medium flame. Let it cool down completely. Then grease your palms and peel it.
  3. Then cut them into 2 pieces. Grease your palms and press it between your palms to make it flat. Likewise, prepare all the arbi.
  4. Meanwhile, heat oil in a pan for shallow frying over medium flame. Place the prepared arbi in a pan. Shallow fry it on a medium flame for 2 to 3 minutes.
  5. Flip it and shallow fry it from another side on a medium flame for 2 to 3 minutes until they become crispy and golden brown from both sides.
  6. Once done, take it out on a plate. Keep it aside.
  7. FOR PREPARING MASALA ARBI :
  8. Take a bowl. Add turmeric powder, salt, coriander powder, red chilli powder, all spice mix powder, dry fenugreek leaves, dry mango powder, and a little water. Mix well.
  9. Heat mustard oil in a pan. Add asafoetida, carom seeds, green chilli, and the prepared spice mixture. Mix well.
  10. Saute it for 2 to 3 minutes on medium flame till the oil separates. Stir it occasionally.
  11. Now add a little water and mix well. Then add the prepared arbi and mix well.
  12. Add coriander leaves and mix well. Once done, turn off the flame and take it out in a serving bowl.
  13. 'Masala Arbi' is ready to be served.
