Ingredients

  • INGREDIENTS FOR LAUKI AND CHANA DAL SABJI:-
  • Chana dal/Begal Gran - 1/4 cup soaked for 1/2 an hour
  • Lauki/Bottle Gourd - 1/2 cup dliced
  • Tomato - 1/2 diced
  • Oil - 1 Tablespoon
  • Mustard seeds - 1/4 Teaspoon
  • Cumin seeds - 1/4 Teaspoon
  • Asafoetida/Heeng - a pinch
  • Curry leaves - few
  • Green chilli - 1
  • Salt - to taste
  • Turmeric powder - 1/2 Teaspoon
  • Red chilli powder - 1/2 Teaspoon
  • Cumin-Coriander powder - 1/2 Teaspoon
  • Gur/Gud/Jaggery - a pinch
  • Coriander leaves - 1 Tablespoon chopped
  • INGREDIENTS FOR METHI PARATHA:-
  • Whole Wheat flour - 1 Cup
  • Methi/Fenugreek leaves - 1/2 Cup
  • Coriander leaves - 1 Tablespoon
  • Cumin seeds - 1/2 Teaspoon
  • Ajwain/Carom - 1/2 Teaspoon
  • Oil - 1/2 Tablespoon
  • Salt - to taste
  • Ginger-Green chilli paste - 1 Tablespoon
  • Turmeric powder - 1/4 Teaspoon
  • Water - as required for making the dough
  • Oil or Ghee/Clarified Butter - 3 Tablespoon for roasting or use as required

Instructions

  1. PREPARING LAUKI AND CHANA DAL SABJI:-
  2. In a pressure cooker add oil and do tampering with mustard and cumin seeds.
  3. Add green chilli, curry leaves and asafoetida.
  4. Then add tomato and let it cook. Add Chana dal, lauki, and remaining ingredients.
  5. Keep some coriander leaves for garnishing.
  6. Close the lid of the cooker. Cook it for one whistle on fast gas and then on slow down the gas and cook for 4 whistles. Once done switch off the gas.
  7. Open the cooker after cooling and transfer Sabji to a serving bowl. Garnish with coriander leaves.
  8. PREPARING METHI PARATHA:-
  9. Make a dough for Methi Paratha using all ingredients. Divide the dough into equal sized portion.
  10. Roll the dough using rolling pin to make round paratha like chapati.
  11. Meanwhile, heat a tawa.
  12. Cook the Paratha by applying some ghee or oil on both the sides. Once cooked take it out on a plate.
  13. Yummy 'Methi Paratha With Chana dal and Lauki Sabji' is ready to be served. Serve hot with green chutney.
