  • FOR SOUR CREAM :
  • Lemon juice quantity can be adjusted as per the sourness of the curd.
  • FOR UNCOOKED SALSA :
  • Finely chopped green chilli can be added instead of red chilli flakes.
  • FOR MEXICAN RICE :
  • The chilli flakes should be added to the hot oil with garlic to enhance flavour and smell.
  • Keep the vegetables crunchy.
  • Boiled rajma can be added.
  • White rice or brown rice can be used.
  • FOR REFRIED BEANS :
  • The rajma should be coarsely blended.

Ingredients

  • Grated cheese - As required
  • Garlic / Lahsun - 1 Cup finely chopped (optional)
  • Spring onion - Finely chopped for garnishing
  • Nachos - As required
  • FOR PREPARING REFRIED BEANS :
  • Kidney beans / Rajma - 3 Cups
  • Water - As required
  • Tomato / Tamatar - 4 Finely chopped
  • Onion / Pyaz - 3 Finely chopped
  • Oil - 2 tbsp
  • Chilli flakes - 2 tsp
  • Salt - As per taste
  • Tomato ketchup - 2 to 3 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • FOR PREPARING MEXICAN RICE :
  • Rice / Chawal - 2 Cups
  • Water - As required
  • Onion / Pyaz - 2 chopped
  • Tricolour bell pepper - 3 Diced
  • Oil - 1 tbsp
  • Chilli flakes - 3 tsp
  • Salt - As per taste
  • Sweet corn - 1 Cup parboiled
  • Tomato ketchup - 2 to 3 tsp
  • FOR PREPARING UNCOOKED SALSA :
  • Onion / Pyaz - 4 Finely chopped
  • Tomato / Tamatar - 6 Finely chopped
  • Coriander leaves / Hara dhaniya - A bunch
  • Salt - As per taste
  • Oregano - 1 tsp
  • Black pepper powder / Kali mirch - 1/2 tsp
  • Chilli flakes - 1 tsp
  • Red chilli powder / Lal mirch powder - 1/2 tsp
  • Lemon juice / NImbu ka ras - Of 1/2 Lemon
  • FOR PREPARING SOUR CREAM :
  • Curd / Dahi - 1 & 1/2 kg.
  • Salt - As per taste
  • Black pepper powder / Kali mirch - 1 tsp
  • Lemon juice / NImbu ka ras - Of 1 Lemon
  • FOR PREPARING MEXICAN TORTILLA WRAP :
  • All purpose flour / Maida - 1 Cup
  • Maize flour / Makke ka aata - 3/4 Cup
  • Salt - As per taste
  • Water - As required
  • Cabbage / Patta gobhi - 1 Julienne
  • Onion / Pyaz - 2 Sliced
  • Oil - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING REFRIED BEANS :
  2. Soak rajma overnight. Then strain it and transfer it to a pressure cooker, and add water. Cook it till 6 to 7 whistles on a medium flame. Once done, Let it cool down. Now coarsely blend it. Keep it aside.
  3. Heat oil in a pan. Add 2 tsp of garlic and chilli flakes. Mix well and saute it for a few seconds on a high flame.
  4. Now add onion and mix well. Saute it for 1 to 2 minutes on high flame.
  5. Then add tomato. Mix well. Add salt and mix well. Then add boiled rajma. Mix well.
  6. Now add tomato ketchup and red chilli powder. Mix well. Boil it for 5 minutes on medium flame. Once done, turn off the flame and keep it aside.
  7. FOR PREPARING MEXICAN RICE :
  8. Firstly, soak the rice for 15 minutes. Then boil the required amount of water in a pan. Add the soaked rice. Mix well.
  9. Boil it for 12 to 15 minutes on medium flame. Keep stirring in between. Once done, drain out its water and take out the cooked rice in a bowl. Keep it aside.
  10. Heat oil in a pan. Add 3 tsp of garlic and chilli flakes. Mix well and saute it for a few seconds on high flame.
  11. Now add onion and mix well. Saute it for 1 to 2 minutes on a high flame.
  12. Further, add tricolour bell peppers. Mix well and saute it for 1 to 2 minutes on a high flame.
  13. Add salt, sweet corn, and tomato ketchup. Mix well. Then add cooked rice. Mix well. Once done, keep it aside.
  14. FOR PREPARING UNCOOKED SALSA :
  15. Take coriander leaves, tomato, and onion in a bowl. Add salt, oregano, black pepper powder, chilli flakes, red chilli powder, and lemon juice. Mix well. Keep it aside.
  16. FOR PREPARING SOUR CREAM :
  17. Take a strainer and put a muslin cloth on it. Pour the curd and tie the cloth. Then leave it on a strainer for at least 4 to 5 hours.
  18. Then transfer it to a bowl. Add salt, black pepper powder, and lemon juice. Mix well. Keep it aside.
  19. FOR PREPARING MEXICAN BURRITO BOWL :
  20. Take a big serving bowl. Make a thick layer of mexican rice. Press it while preparing a layer. Then make a thin layer of refried beans.
  21. Now spread sour cream on it to prepare a layer of it. Further, spread uncooked salsa on it. Garnish it with spring onion and cheese. Lastly, crush the nachos and add them.
  22. FOR PREPARING MEXICAN TORTILLA WRAP :
  23. Take all purpose flour, maize flour, and salt in a bowl. Mix well and knead the medium soft consistency dough using water.
  24. Cover it with muslin cloth and keep it aside for 15 to 20 minutes.
  25. Take the small sized ball from the dough. Prepare a peda from it. Roll a peda to make a thin roti.
  26. Meanwhile, heat a tawa. Place the roti on it and half roast it on one side. Flip it, once it is slightly brown.
  27. Half roast it from another side. Now take it out to a plate. Likewise, prepare all roti.
  28. Take a roti and spread refried beans on it. Add uncooked salsa, sour cream, cheese, cabbage, and onion, on the left side of it.
  29. Now fold the roti's lower part and then fold its left and right part tightly to prepare a wrap. Press it.
  30. Meanwhile, heat the grill tawa. Place the prepared wrap on the tawa and roast it. Flip it to roast from the other side.
  31. Roast it from both sides by applying oil till it becomes crunchy. Once done, take out it on the serving plate. Cut it from the middle.
  32. FOR PREPARING NACHOS :
  33. Arrange nachos on a plate. Spread prepared refried beans and sour cream on it. Garnish it with cheese and serve it with uncooked salsa.
  34. 'Mexican Veg Thali For 10 People In 1 Hour' is ready to be served.
