Tips and Suggestions by the Mom Chef:
- The moyan should be checked by binding the flour. If it binds, the moyan is perfect. Else, more oil should be added.
- Grind black peppercorns coarsely and sieve it to separate the coarse black pepper.
- If besan stuffing becomes wet add some more besan.
- Cover the besan stuffing well with the dough.
- Once the kachori cools completely, store it in a container for 30 days.
