Panchmel Dal | Panchratna Dal is a delicious side dish for baati. 

As the name suggests Panchmel Dal | Panchratna Dal means five types of lentils cooked together. This is a side dish of Baati in a Rajasthani Thali. This has pigeon peas, bengal gram, red lentil, black gram and green gram. Tadka of ghee along with some spices, onion, tomato, garlic and ginger added that makes it more delicious. This is so tasty and healthy that you will love to have on a regular basis. This dal is very famous in all over Rajasthan. So, try to make this yummy dal at home and enjoy the meal with your family.

  • If you want to make it more spicy, add green chillies.
  • You can avoid garlic if you want.

Ingredients

  • Green Gram/Green Moond dal - 2 Tablespoon
  • Masoor Dal/Red Lentil - 2 Tablespoon
  • Bengal Gram/Chana Dal - 2 Tablespoon
  • Black Gram/Urad Dal - 2 Tablespoon
  • Pigeon peas/Toor Dal - 2 Tablespoon
  • Onion - 1 medium sized
  • Tomato - 2 pureed
  • Ginger paste - 1/2 Teaspoon
  • Garlic - 1/2 Teaspoon
  • Asafoetida/Hing - a pinch
  • Mustard seeds - 1/4 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Red chilli powder - 1 Teaspoon or as per taste
  • Turmeric powder - 1/2 Teaspoon + 1/4 Teaspoon
  • Coriander powder - 1 Teaspoon
  • Ghee/Clarified butter - 2 Tablespoon + 1 Teaspoon
  • Coriander leaves - as required for garnishing

Instructions

  1. Take a bowl and all the dal. Wash and soak the salt for at least 1 & 1/2 hour to 2 hours.
  2. Take a pressure cooker, add 1 teaspoon ghee and heat it. Add soaked dal and roast it for a minute. Then add water 4 times to the dal, salt and 1/2 Teaspoon of turmeric powder. Close the lid and cook it on a high flame for 1 whistle. Then lower the flame and cook for another 2 whistles. Let is cool completely.
  3. Now, take a pan. Add 2 tablespoon of ghee and heat it.
  4. Add mustard seeds, cumin seeds and asafoetida. Let the seeds crackle.
  5. Add chopped onion and saute it. Then add garlic and ginger paste. Saute it until the onion turns translucent.
  6. Add tomato puree to it. Mix well and cook.
  7. Add 1/4 teaspoon of turmeric powder, red chilli powder, coriander powder and little salt. Mix well and cook it until the oil leaves the side.
  8. Now, add cooked dal to it. Mix well and bring it to boil. Add coriander leaves and switch off the gas once boiled.
  9. Delicious 'Panchmel Dal | Panchratna Dal' is ready to e served.
