Papad Ki Sabji is a traditional dish.

Papad Ki Sabji is a crunchy and tasty dish. It is a curd base gravy dish. It tastes great with roti and phulka. Whenever you want to make a different sabji or vegetables are not available, then you can make this dish. It requires curd, papad, red chili powder, coriander seeds powder, dry fenugreek leaves, cumin seeds. The curry leaves, green chili and ginger gives it a nice flavor. Roasting the papad makes it crunchy. So, try this recipe and let us know your feedback in the comment section.

  • If you want, you can use oil, in place of ghee.
  • You can roast the papad in microwave and use in the dish.
  • You can use raw papad also, for making the dish.
  • Use the curd at room temperature.

Ingredients

  • Papad - 2 no
  • Clarified butter/Ghee - 3 teaspoon
  • Asafoetida powder/Hing powder - a pinch
  • Cumin seeds/Jeera - 1 teaspoon
  • Ginger/Adrak - 1/2 inch grated
  • Green chili/Hari mirch - 2 no slit
  • Curry leaves - a few
  • Red chili powder/Lal mirch powder - to taste
  • Turmeric powder/Haldi powder - 1/2 teaspoon
  • Coriander seeds powder/Dhania powder - 1 teaspoon
  • Fresh Curd/Dahi - 1 cup (whisked)
  • Salt - to taste
  • Dry fenugreek leaves/Kasuri methi - to taste
  • All spice mix powder/Garam masala - 1/2 teaspoon
  • Coriander leaves - to garnish

Instructions

  1. Take the papad and make small pieces of it. Roast them in a pan on medium to low flame for 2 to 3 minutes. Keep stirring in between.
  2. Heat ghee, put the asafoetida powder, cumin seeds, grated ginger, green chilies, and curry leaves. Mix well.
  3. Then, put the red chili powder, turmeric powder, and coriander seeds powder. Mix well. Keep the flame low and add the curd. Mix continuously.
  4. Once the curd starts to boil, then switch the flame from low to high. Put the salt to taste, rub the dry fenugreek leaves and then add.
  5. Then, put the all spice mix powder and mix. Put the roasted papad pieces and mix well. Garnish with the coriander leaves.
  6. The Papad Ki Sabji is ready to be served.
