Papad Ki Sabji | Rajasthani Papad Ki Sabzi is a mouthwatering delicacy for all.

Papad Ki Sabji | Rajasthani Papad Ki Sabzi or Dahi Papad ki sabzi is a delicious sabzi. This is quick and easy to prepare, requires few ingredients and only 5 minutes of cooking. This does not have onion and garlic hence suitable for everyone. You can enjoy this sabzi with roti or rice or even with paratha and poori. This tastes amazing when served hot. It has a crunch of papad as this recipe uses roasted papad. You just require curd and some spices to make this sabzi. This is a perfect option when you do not have any type of veggies or when you do not have much time for cooking. So, try to make this sabji at your end and let us know your feedback.

Tips and Suggestions by Mom Chef:-

  • Use fresh curd to make the sabzi. The curd should be at room temperature before adding to the pan else it will curdle.
  • You can use unroasted papad too. But the sabzi tastes better with roasted papad.
  • After adding papad to the sabzi, serve it immediately. OR you can keep gravy and papad separately. Add papad to the gravy just before serving.

Ingredients

  • Papad - 3
  • Curd - 1 Cup
  • Ginger - 1/2 inch piece grated
  • Green chilli - 1 chopped
  • Asafoetida/hing - a pinch
  • Cumin seeds - 1 Teaspoon
  • Haldi/Turmeric powder - 1/4 Teaspoon
  • Red Chilli Powder - 1/2 Teaspoon
  • Coriander powder - 1 & 1/2 Teaspoon
  • Kasuri Methi/Fenugreek leaves - 1/2 Teaspoon
  • Salt - as per taste
  • Garam Masala/All spice mix - a pinch
  • Water - 1 Tablespoon
  • Malai/Homemade cream - 1 Tablespoon (optional)
  • Coriander leaves - 2 Tablespoon
  • Ghee/Clarified butter - 2 Tablespoon

Instructions

  1. Roast the papad on direct flame. Then crush it to make smaller pieces. Keep aside.
  2. Heat ghee in a pan. Then add asafoetida, cumin seeds. Let the seeds crackle.
  3. Add grated ginger and green chilli. Saute it for few seconds.
  4. Now, add coriander powder, turmeric powder, kasuri methi/dry fenugreek leaves, little salt (as papad contains salt), red chilli powder. Mix well and cook. Add 1 tablespoon water so that masala will not burn. Mix well and cook.
  5. Lower the flame. Beat the curd and add to the pan. Stir it continuously and cook it until it gets boiled on a low flame.
  6. Add malai/homemade cream and mix well. Cook for a minute then switch off the gas.
  7. Add roasted papad pieces to it. Garnish it with coriander leaves.
  8. Delicious 'Papad Ki Sabji | Rajasthani Papad Ki Sabzi' is ready to be served.
