Pittod Ki Sabji | Pithod Ki Sabji is very popular sabji from Rajasthani cuisine. 

Pittod Ki Sabji | Pithod Ki Sabji is a mouthwatering sabji goes well with chapati. The pittod made of gram flour or besan cooked in the curd based gravy to make this amazing curry. You just need gram flour, curd and basic spices. If you do not have any veggie at home then this is a perfect option. You should try it once and you will fall in love with this curry. Moreover, this is quick and very simple to prepare. You can prepare this curry without any hassle. So, try to make this sabji at home and enjoy with your family. Do share your feedback as well.

Tips and Suggestions by Mom Chef:-

  • To make pittod, first mix the ingredients in the pan then cook it on a low flame. Keep stirring the mixture.
  • For curd based gravy, always switch off the flame then add curd to the pan.
  • Cook the gravy on a low flame while stirring it continuously until it is boiled.
  • After adding pittod do not cook it for more. Else, the pittod may break.

Ingredients

  • INGREDIENTS FOR PITTOD:-
  • Besan/Gram Flour - 2 to 3 Tablespoon
  • Curd - 1 Cup
  • Salt - as per taste
  • Red Chilli powder - 1/4 Teaspoon or as per taste
  • Turmeric powder - 1/4 Teaspoon
  • Cumin seeds - 1/4 Teaspoon
  • INGREDIENTS FOR GRAVY:-
  • Curd - 4 Tablespoon
  • Salt - as per taste
  • Red Chilli powder - 1/2 Teaspoon
  • Turmeric powder - 1/4 Teaspoon
  • Asafoetida/Hing - a pinch
  • Mustard seeds - 1/4 Teaspoon
  • Cumin seeds - 1/4 Teaspoon
  • Ghee/Clarified butter - 1 Teaspoon
  • Coriander Leaves - as required for garnishing

Instructions

  1. PREPARING PITTOD:-
  2. Take a kadai, add beaten curd, gram flour, salt, red chilli powder, turmeric powder, little water. Crush the cumin seeds between the palms and add to it. Mix well.
  3. Switch on the gas and cook it on a low flame until it gets thicken. Stir it continuously to make it lumps free. It will not stick to the hands this is the sign that the mixture id cooked well.
  4. Transfer the mixture to the greased plate. Spread it evenly. (keep it little thick) Let it cool. Keep the residue in the kadai for later use.
  5. Once cooled, cut into pieces.
  6. PREPARING THE GRAVY:-
  7. Heat ghee in a pan.
  8. Add asafoetida, mustard seeds, cumin seeds. Let the seeds crackle and then switch off the flame.
  9. Add salt, red chilli powder, turmeric powder to the curd. Mix well. Add this mixture to the pan. Mix well.
  10. Switch on the flame and let it cool on a low flame. Stir it continuously while boiling it.
  11. Add water to the kadai in which we have prepared pittod. Scratch the residue and mix well.
  12. Once the curd mixture is boiled, add the water with residue. Mix well and let it boil.
  13. Once the gravy is boiled, add square pieces of pittod. Let it boil and then switch off the flame. Garnish it with chopped coriander leaves.
  14. Delicious 'Pittod Ki Sabji | Pithod Ki Sabji' is ready to be served. Serve hot with chapati.
