Rabdi Ghevar | Instant Rabdi Ghevar is a quick and simple sweet dish. Ghevar is a popular dessert from Rajasthan. Here, is a very simplified version of the famous dessert. This is a 2-in-1 recipe. As, you will learn to make rabdi and a easy form of ghevar. It requires ingredients like milk, paneer, sugar, bread and milk powder. The cardamom powder and dry nuts makes it tastier. Tips and Suggestions by Mom Chef:-

  • While making the milk powder slurry, you can use either water or milk.
  • In place of paneer, you can use chenna.
  • Adjust the amount of sugar as per your taste.
  • Make this dish using  Homemade Paneer
  • You can add the dry fruits in the dish of your choice.
  • The sugar syrup should be at lukewarm temperature, else the bread ghevar will melt in the syrup.

Ingredients

  • FOR RABDI:
  • Milk - 250 ml
  • Milk powder - 2 tablespoon
  • Cottage cheese/Paneer - 200 to 250 grams grated
  • Sugar - 3 teaspoon
  • Saffron/Kesar strands - a few
  • Almonds/Badam - as required chopped
  • Cardamom powder/Elaichi powder - to taste
  • Pistachio/Pista - as required chopped
  • FOR SUGAR SYRUP:
  • Sugar - 1 cup
  • Water - 1/2 cup
  • FOR GHEVAR:
  • White bread - 1 slice
  • Clarified butter/Ghee - 2 tablespoon
  • Oil - 1 to 2 tablespoon

Instructions

  1. FOR RABDI:
  2. In a pan, heat milk. In a small bowl, put the milk powder and add milk and mix well to make a slurry.
  3. As the milk boils, switch the gas to low flame and add the milk powder slurry. Mix well and stir continuously on high flame.
  4. Put the grated paneer and sugar and mix well. Stir continuously till it cooks and thickens. It will take around 7 to 8 minutes.
  5. If required add more milk powder in order to thicken the rabdi. Once the rabdi is ready put the saffron strands, cardamom powder and chopped almonds and pistachio.
  6. FOR SUGAR SYRUP:
  7. In a wok/kadhai, put 1/2 cup water and add 1 cup sugar. Boil the mixture on high flame. As it boils switch to low flame and cook for 2 to 3 minutes.
  8. The consistency of the syrup should be of one-thread. To check, take some syrup on a spoon and dip the thumb and index finger.
  9. Then, pull the up the syrup in the fingers in upward direction. One small thread should form. The sugar syrup should be at lukewarm temperature.
  10. FOR GHEVAR:
  11. Take a bread slice. With the help of a steel bowl, cut it in circle shape. In the middle make a small hole.
  12. In a wok/kadhai, heat oil and then add ghee. When the ghee is hot enough, add the circle shape bread.
  13. Fry from both the sides till golden brown to brown in color. Take out the bread on a tissue paper.
  14. SERVING THE RABDI GHEVAR:
  15. Dip the ghevar in the sugar syrup and coat with the syrup. Take it out in a plate. Spread the rabdi and sprinkle cardamom powder and garnish with chopped almonds and pistachio.
  16. Keep the ghevar on a plate. Spread the rabdi and sprinkle cardamom powder and garnish with chopped almonds and pistachio.
