Sabudana Vada Without Frying is a traditional upvas special dish.

Sabudana Vada Without Frying is the best option to have for fasting. It is crispy on the outside and soft on the inside spicy vada. To live a healthy lifestyle, one should stay away from deep-fried foods. So, here we bring this recipe without frying. It is often served with spicy green chutney. Sabudana is It’s high in carbs, yet low in fat. You just need soaked tapioca pearls (sago), mashed potatoes, roasted peanuts, some spices, and herbs to prepare this vada.   • The potato should be grated after it completely cools down.
  • The potato mixture should be moisture free.
  • You can use oil instead of ghee.

Ingredients

  • Tapioca pearls (sago) / Sabudana - 1 Cup
  • Water - As required
  • Boiled potato/ Uble huye aloo - 2 Peeled and grated
  • Rock salt - As per taste
  • Ginger-green chilli paste / Adrakh hari mirchi paste - 1 tsp
  • Peanuts / Mungfali - 2 tbsp Roasted and roughly crushed
  • Coriander leaves / Hara dhaniya - A handful
  • Lemon juice / Nimbu ka ras - Of 1/2 lemon
  • Clarified butter / Ghee - For shallow frying
  • tsp = teaspoon

Instructions

  1. Wash the sabudana with water for 2 to 3 times to remove it's starch. Take it out in a strainer and drain the water completely.
  2. Now take it out in a dry bowl. Add water til sabudana are completely submerged in it. Soak it for 5 to 6 hours.
  3. Take soaked sabudana in a bowl. Add boiled potato, rock salt, ginger-green chilli paste, roasted peanuts powder, coriander leaves, and lemon juice. Mix well.
  4. Take a small ball-sized portion of the mixture. Press it with your hands and prepare a flattened vada. Likewise, prepare all vadas.
  5. Meanwhile, heat a tawa over a medium flame, and add ghee. Place the vada gently in a pan. Shallow fry them by pressing on medium flame for 2 to 3 minutes.
  6. Flip it and roast it on medium flame from another side. Likewise shallow fry all vadas. Once done take it out on the serving plate.
  7. 'Sabudana Vada Without Frying' is ready to be served.
