In addition, it is stuffed with a potato mixture that gives a mouthwatering taste. When it is bake in an air fryer it becomes crispy and tasty. Tips and Suggestions by a Mom Chef:

  • You can prepare this dish with whole wheat flour or add half wheat flour with maida.
  • If the atmosphere is hot give 1-hour rest to the dough.
  • If the atmosphere is cold give 2-hour rest to the dough.
  • While giving rest cover the dough with a muslin cloth or put it in an air-tight box.
  • Use grated ginger green chili instead of its paste.
  • You can stuff the kulcha as per your choice like paneer, pyaz/onion.

Ingredients

  • FOR KULCHA DOUGH :
  • All purpose flour / Maida - 2 Cup
  • Salt - As per taste
  • Powdered sugar - 1 Teaspoon
  • Baking soda - 1/2 Teaspoon
  • Baking powder - 1 Teaspoon
  • Oil - 2 Tablespoon
  • Curd - 1/2 Cup
  • FOR STUFFING :
  • Boiled and mashed potato - 2
  • Ginger green chili paste / Adrakh hari mirchi paste - 1 Teaspoon
  • Red chili powder / Lal mirchi powder - 1/2 Teaspoon
  • Coriander powder / Dhaniya powder - 1/2 Teaspoon
  • Cumin powder / Jeera powder - 1/2 Teaspoon
  • All spice mix powder / Garam masala - 1/2 Teaspoon
  • Black salt / Kala namak - 1/4 Teaspoon
  • Dry mango powder / Aamchur powder - 1/4 Teaspoon
  • Coriander leaves / Hara dhaniya - A handful
  • FOR PREPARING STUFFED KULCHA :
  • Oil - As required
  • Water - As required
  • Kalonji / Onion seeds - as required
  • Coriander leaves / Hara Dhaniya - As required
  • Butter - As required

Instructions

  1. PREPARING KULCHA DOUGH :
  2. Take all purpose flour in a bowl. Add salt, powdered sugar, baking soda, baking powder, oil, curd.
  3. Knead them together to make a dough of soft consistency. Put it in a air-tight box. Keep it aside and let it rest for 2 hours.
  4. PREPARING STUFFING :
  5. Take boiled and mashed potato in a bowl. Add ginger green chili paste, red chili powder, coriander powder, cumin powder, all spice mix powder, black salt, dry mango powder, coriander leaves. Mix well. Prepare balls from stuffing.
  6. PREPARING STUFFED KULCHA :
  7. Take a ball sized dough. Apply some oil and knead it. Dust it with a flour and roll it using rolling pin. Make a small thick roti.
  8. Put the potato stuffing ball in the centre. Cover and seal it properly. Press it with fingers and make little flat. Apply little drop of water on the kulcha.
  9. Sprinkle some kalonji and coriander leaves on top.
  10. Then roll it thick using rolling pin. Then grease it with butter.
  11. Now switch on your air fryer and turn on bake option, set the timer for 8 minutes. Then set the temperature at 180 degree Celsius.
  12. Open air fryer grill and grease it with oil and Place one kulcha in it. Let it bake for 8 minutes. Once cooked take out on a serving plate.
  13. Stuffed Kulcha In Air Fryer is ready to serve.
