Tawa Sabzi | Mixed Tawa Sabzi is a lip-smacking side dish. 

Tawa Sabzi | Mixed Tawa Sabzi is a yummy weekend special sabzi. This has lots of veggies that taste amazing with roti or paratha. It requires Potato, onion, brinjal, capsicum, cauliflower, pointed gourd, big-sized green chili, bitter gourd, and some spices. The veggies are cooked with the spices on the tawa as the name suggests. This is a healthy and tasty dish. It is a must-try for foodies, tastes awesome when served with chapati or roti. In North India, you will find this delicious option in almost every wedding menu. So, try to make this delicious sabzi for your family and friends and let us know how you liked it.

  • Depending on the size of the tawa, you can cook all the veggies altogether or one by one.
  • Use the veggies as per the availability and choice.
  • If you have big onion and potatoes then cut it into 4 pieces.
  • You can also store the tawa masala in an airtight container and use it as required or to make any other dry sabzi.
  • You can steam all vegetables instead of shallow fry.

Ingredients

  • Apple gourd / Indian squash - 1
  • Potato - 2 small sized
  • Onion - 4 small sized
  • Ladyfinger - 5 - 6
  • Brinjal- 2 small sized
  • Green chilli - 2 big sized
  • Tricolour Capsicum - 1 Cup diced
  • Beans - 4- 5
  • Carrot - 1
  • Tindora/Kundru/Ivy Gourd/Coccinia grandis - 2 to 3
  • Cauliflower florets - 1/2 Cup
  • Bitter Gourd - 2
  • Vegetable oil - 2 Tablespoon + as required to shallow fry
  • Cumin seeds - 1/2 Teaspoon
  • Hing/Asafoetida - a pinch
  • Ginger green chili paste - 1 Teaspoon
  • INGREDIENTS FOR TAWA SABJI MASALA:-
  • Salt - 1 Teaspoon
  • Red chilli powder - 2 Teaspoon
  • Coriander powder - 2 Teaspoon
  • Dry mango powder or Amchur - 1 Teaspoon
  • Garam masala/All Spice mix - 1 Teaspoon

Instructions

  1. Wash all vegetables properly.
  2. Peel carrot and potatoes. Make holes using fork spoon in potato, cut carrot in long slices. Peel the onion. Cut apple gourd into 2 pieces.
  3. Cut beans and ladyfinger in long pieces.
  4. Make a slit on brinjal from the bottom so that it remains joined to the stem. Make a slit in the bitter gourd and remove its seeds then slit Tindora/Kundru/Ivy Gourd/Coccinia grandis, and green chilli.
  5. Heat oil in a pan for shallow frying.
  6. Add apple gourd, beans, ladyfinger, carrot, potato, brinjal, cauliflower florets, bitter gourd, onion, tindora, beans, capsicum. Mix well and cook. Cover it with lid and cook it for about 8 to 10 minutes or until veggies are soft.
  7. PREPARING TAWA SABJI MASALA :
  8. Take a bowl. Add red chilli powder, coriander powder, dry mango powder, garam masala, and salt. Mix well.
  9. Put tawa on gas and add oil and heat it. Then, add asafoetida and cumin seeds. Let the seeds crackle. Add ginger green chili paste. mix well.
  10. Now, add shallow fried vegetables, sprinkle tawa sabji masala, Mix well. Stuff tawa sabji masala in bitter gourd and brinjal. Then take it out. Turn off the flame.
  11. Tawa Sabzi | Mixed Tawa Sabzi is ready to serve.
