Tomato Salan | Maharashtrian Tomato Salan is a lip-smacking tasty salan that tastes awesome with rice, but you can even have it with roti. However, the combination of fresh coconut and tomatoes brings an amazing flavor to the dish. This salan does not require any curd or buttermilk, as it gets the tanginess from the tomato puree. Tomatoes are a rich source of vitamin C, a natural antioxidant that prevents cancer. It is also beneficial for good eyesight and clear skin. Try to prepare this delicious and unique recipe and enjoy it with family and friends.   • To peel the boiled tomato quickly, the top should be cut and a half-inch crisscross cut should be made on the tomato.
  • The consistency of the onion-coconut paste should be thick.
  • The consistency of the salan should be adjusted as required.
  • Kashmiri red chilli should be added to get a nice red colour.
  • The spiciness should be adjusted as required.
  • It should be served hot for a better taste.

Ingredients

  • Tomato - as required
  • Onion - 1
  • Garlic - 6 to 7 cloves
  • Fresh coconut - 1/2 coconut, chopped
  • Dry Kashmiri red chilli - as required
  • Water - as required
  • Turmeric powder - a pinch
  • Oil - 2 to 2(1/2) teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - a few
  • Asafoetida/Hing - a pinch
  • Kashmiri red chilli powder - as required
  • Red Chili Powder/Lal Mirch Powder - as required
  • Salt - as required
  • Coriander leaves - finely chopped, as required

Instructions

  1. Soak Kashmiri red chilli in enough water for 10 minutes and then drain the water.
  2. In a mixer jar, grind onion, garlic, fresh coconut, soaked dry Kashmiri red chilli, and turmeric powder.
  3. Add a little water and grind it to a thick paste.
  4. Now, cut the top and make a half inch crisscross cut to the tomato.
  5. Then, boil water and place the tomato in it. Allow it to boil for 10 minutes and turn off the flame.
  6. Remove the skin of the tomato and grind it to a fine puree by adding a little water. Keep the puree aside and add some water to the grinder jar and save that water for further use.
  7. Now, heat oil in a pan and add mustard seeds, curry leaves, and hing.
  8. After the spluttering add Kashmiri red chili powder, red chili powder, the above-prepared onion coconut paste, and tomato puree. Sauté well on a low flame.
  9. Add salt and pour water saved into the grinder jar. Allow it to boil for 5 minutes on a medium to high flame.
  10. Adjust the consistency of the salan as per the requirement.
  11. Transfer it to a bowl and garnish it with coriander leaves.
  12. Delicious 'Tomato Salan | Maharashtrian Tomato Salan' is ready to be served.
