Turai Ke Chilke Ki Chutney is a mouthwatering and taste out of the waste recipe.

We always throw the peels of sponge gourd or ridge gourd. Do you know you can make a lip-smacking ‘Turai Ke Chilke Ki Chutney’ using peels? This is amazing in taste and full of nutrition. This is like green chutney you can use as a side dish for your meals or as a dip for snacks. Everyone will love this chutney and demand more and no one will recognise that this is peels chutney. Tips and Suggestions by Mom Chef:-

  • You can use peels of ridge gourd or sponge gourd. Make sure to wash the peels thoroughly with water.
  • Use soft peels only because the harder one tastes bitter.
  • You can use tamarind paste or lemon juice. But tamarind paste enhances the taste better as compared to lemon.
  • To make tamarind paste, soak the tamarind. Then grind and strain it.

Ingredients

  • Turai Ke Chilke/ Ridge Gourd or Sponge Gourd peels - peels of 1 turai
  • Sarso/ Mustard seeds - 1/2 Teaspoon
  • Jeera/ Cumin seeds - 1/2 Teaspoon
  • Hing/ Asafoetida - a pinch
  • Roasted Moongfali/ Peanuts - 1 Tablespoon (without peels)
  • Hari mirch/ Green chilli - 1 chopped
  • Adrak/ Ginger - 1/2 inch piece grated
  • Namak/ Salt - as per taste
  • Imli/ Tamarind paste - 1 Tablespoon
  • Tel/ Oil - 1 Teaspoon

Instructions

  1. Heat oil in a pan.
  2. Add mustard seeds, cumin seeds, and asafoetida.
  3. Then, add roasted peanuts and green chilli. Sauté for a few seconds.
  4. Add well-washed peels. Sauté it on a medium flame. Add salt to it and mix well. Cover and cook for 2 minutes or until the peels turns soft. Once done, turn off the gas and let it cool completely.
  5. Grind sautéed peels, tamarind paste, and a little water in a grinder jar to make a smooth chutney. Then transfer the chutney to a bowl.
  6. Delicious 'Turai Ke Chilke Ki Chutney' is ready to be served.
