Vankaya Sabji | South Indian Style Baingan Sabji is a famous south Indian recipe.

Vankaya Sabji | South Indian Style Baingan Sabji is a side dish of Indian cuisine made by stir-frying brinjal with spices and herbs. Roasted spices give a twist to your regular cooking taste. You can serve it over rice or with any Indian flatbreads of your choice like roti or paratha. Prepare this recipe for your weekday meal and don’t forget to share your feedback with us.

Tips and Suggestions by Mom Chef :

  • The brinjal should be small in size for this dish.
  • Cut the brinjal just before cooking, otherwise, it will turn black.
  • If you have grated coconut then add it to roasted spice before the grinding.
  • You can add tamarind juice instead of the whole tamarind.

Ingredients

  • Oil - 3 Tablespoons
  • Mustard seeds / Rai - 1/2 Teaspoon
  • Split Black Gram / Urad Dal - 1 Teaspoon
  • Chickpeas Split / Chana Dal / Bengal Gram - 1 Teaspoon
  • Turmeric Powder / Haldi - 1/4 Teaspoon
  • Curry Leaves / kadhi Patta - Few Leaves
  • Asafoetida / Hing - 1 Pinch
  • Brinjal / Baingan - 250 gm.
  • Salt - As Per Taste
  • Jaggery / Gud - As per Taste
  • Coriander Leaves - For Garnishing
  • FOR MAKING ROASTED MASALA :
  • Chickpeas Split / Chana Dal / Bengal Gram - 2 Teaspoon
  • Split Black Gram / Urad Dal - 1 Teaspoon
  • Coriander seeds - 2 Teaspoon
  • Cumin / Jeera - 1 Teaspoon
  • Dried Byadagi Red Chillies / Sukhi Mirchi - 5-6
  • Tamarind / Imli - 2 Small Pieces
  • Fenugreek seeds / Methidana - 1 Pinch
  • Dry Coconut / Sukha Nariyal - 2 Tablespoon chopped
  • Curry Leaves / kadhi Patta - Few Leaves

Instructions

  1. Heat a oil in pan and add mustard seeds, split black gram, chickpeas split, turmeric powder, curryleaves, asafoetida then add brinjal and mix it well. Cover with a lid and let it cook for a minute.
  2. After 1 minute add salt and mix it well. Cover the pan with lid and cook.
  3. Meanwhile heat a pan add chickpeas split, split black gram,coriander seeds, cumin, dried byadagi red chillies then roast it on low flame for 1 to 2 minutes then add tamarind and fenugreek seeds, dry coconut, curry leaves roaste it for more 4 to 5 more.
  4. Let the spices cool down completely then grind it to make fine powder.
  5. Sprinkle the above prepared masala on cooked brinjal and mix it well then add jaggery mix it well again. Garnish the sabji with coriander leaves.
  6. Vankaya Sabji | South Indian Style Baingan Sabji is ready to serve.
