Besan Sev Ki Kadhi | Sev Ki Kadhi

Besan Sev Ki Kadhi | Sev Ki Kadhi is a traditional recipe from Gujarati cuisine. This is a simply delicious kadhi that goes well with roti or rice especially with bajre ki roti/rotla. This is super easy and simple to make using a few ingredients. The sev is also healthy as this does not require any frying and it is made instantly. This is a perfect option when you want to have something different for lunch or dinner. Everyone will love this kadhi. So, try to make this kadhi at home and enjoy with your family and friends.

Ingredients

  • INGREDIENTS FOR SEV:-
  • Besan/ Gram flour - 2 Tablespoon
  • Fresh Dahi/ Curd - 2 Tablespoon or as required
  • Namak/ Salt - as per taste
  • Haldi powder/ Turmeric powder - 1/4 Teaspoon
  • Laal mirch powder/ Red chilli powder - 1/2 Teaspoon or as per taste
  • Hing/ Asafoetida - a pinch
  • INGREDIENTS FOR KADHI:-
  • Chaas/ Butter Milk - 1 Cup
  • Besan/ Gram Flour - 1 Tablespoon
  • Rai/ Mustard seeds - 1/4 Teaspoon
  • Jeera/ Cumin seeds - 1/2 Teaspoon
  • Danamethi/ Fenugreek seeds - 1/4 Teaspoon
  • Hari mirch/ Green Chilli - 2
  • Adrak/ Ginger - 1/2 inch piece grated
  • Namak/ Salt - as per taste
  • Haldi powder/ Turmeric powder - 1/2 Teaspoon
  • Oil - 2 Teaspoon
  • Ghee/ Clarified butter - 1 to 2 Teaspoon
  • Dhaniya patta/ Coriander Leaves - as required

Instructions

  1. PREPARING THE SEV BATTER-
  2. In a bowl, mix well 2 Tbsp gram flour, salt, turmeric powder, red chilli powder, asafoetida, and fresh curd. The consistency of the batter should be thick like dough. Beat it for 2 to 3 minutes to make it fluffy. Keep aside.
  3. PREPARING THE KADHI-
  4. Heat oil and ghee in a pan.
  5. Add mustard seeds, cumin seeds, and fenugreek seeds and let them crackle.
  6. Then add green chilli and grated ginger.
  7. Meanwhile, in a bowl, add and mix well buttermilk, gram flour, salt, and a little water. Pour this mixture into the pan.
  8. Add turmeric powder and mix well. Let it boil.
  9. Take a skimmer or jhaara and place the sev batter on it. Directly mould the sev into the kadhi by pressing the batter with your fingers.
  10. Cook the kadhi for about 10 minutes while stirring it in between. Then switch off the flame. Garnish the kadhi with coriander leaves.
  11. Delicious 'Besan Sev Ki Kadhi | Sev Ki Kadhi' is ready to be served.
