Ingredients

  • Chickpea / Chhole - 1 Cup
  • Water - As required
  • Salt - As per taste
  • Sugar - 1 tsp
  • Ice Cubes - 5 to 6
  • Oil - 2 tbsp
  • Red Chilli Powder / Lal Mirchi Powder - 1/2 tsp + As required
  • Chaat Masala - 1/2 tsp + As required
  • Boiled Potato / Ube Hue Aloo - 2 to 3 Peeled and chopped
  • Coriander Leaves / Hara Dhania - A handful + For garnishing
  • Curd / Dahi - 1/2 Cup whisked
  • Onion / Pyaz - 1/2 Finely chopped
  • Tomato / Tamatar - 1/2 Finely chopped
  • Cucumber / Kheera - 1/2 finely chopped
  • Mathri / Papdi / Poori - 2 to 3 Crushed (optional)
  • Sweet Chutney / Meethi Chutney - As required
  • Green Chutney / Hari Chutney - As required
  • Roasted Cumin Seeds Powder / Jeera Powder - As required
  • Nylon Sev / Zero Number Sev / Bhujiya - For garnishing
  • Pomegranate Seeds / Anar Ke Dane - For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Soak chickpeas for 15 minutes in hot water. Transfer soaked chickpeas to a pressure cooker. Add salt, sugar, and ice cubes. Cook it on high flame till 1 whistle. Then keep the flame low till 5 to 6 whistles . Once done, strain chickpeas. Keep it aside.
  2. Heat oil in a pan. Add red chilli powder and chaat masala. Mix well. Add boiled potato and chole. Mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
  3. Then add coriander leaves and salt. Mix well. Once done, turn off the flame and slightly let it cool down.
  4. Now take curd on a serving plate. Add the prepared aloo chole mixture, onion, tomato, cucumber, mathri, sweet chutney, and green chutney.
  5. Sprinkle roasted cumin seeds powder, chaat masala, and red chilli powder. Garnish it with nylon sev, pomegranate, and coriander leaves.
  6. Add a little sweet chutney and the prepared aloo chole mixture.
  7. 'Chatpati Aloo Chole Chaat | Aloo Chana Chaat' is ready to be served.
