Kanji Vada is a delicious and healthy drink cum snack which is served in festivals and celebrations.

Kanji Vada is a dal vada made with green gram/black gram and black gram/urad dal soaked in kanji i.e fermented water. It is a delicious and healthy dish generally served on the occasion of Holi. This is very good for digestion too. These are very easy to prepare and tastes so yumm. It is a famous dish of Gujarat and Rajasthan. So, try to make this recipe and let us know how liked it.

Tips and Suggestions by Mom Chef:-

  • You can use a combination of different dal/gram like moth dal or chawali/black-eyed beans dal to make the vada.
  • For instant Kanji Vada (without fermentation), add lemon juice to the Kanji water and it is ready to be served.
  • In this recipe, the vada made is spicy. If you want you can make the vada by adding the only salt to the batter.
  • Soaking the fried vada is an important step. So, do not avoid it.
  • Fry the vada on a medium flame else the vada will not cook properly.
  • You can use split yellow mustard instead of black mustard seeds.

Ingredients

  • Water - 1 Liter
  • Mustard oil - 1 Tablespoon
  • Salt/ namak - 2 Tablespoon
  • Turmeric/ haldi powder - 1/2 Teaspoon
  • Red chilli/ lal mirch powder - 1 Teaspoon
  • Asafoetida/ heeng - 1/4 Teaspoon
  • Split Yellow mustard/rai dal - 2 Tablespoon
  • Moong/green gram or urad/black gram - 1 Cup
  • Split black eyed beans/Chawali ki dal - 1 Cup
  • Oil - for frying vada
  • Mint leaves - for garnishing

Instructions

  1. Boil water and cool down. Then add all spices and mustard oil. Cover it and rest for 2-3 days. This will make the water sour in taste. This water is known as 'Kanji Water'.
  2. Wash both the dal/grams and soak them in enough water for 4-5 hours. Grind them smooth and add salt. Set aside.
  3. Heat enough oil in a pan on a medium flame and fry vada from the batter. Fry them from both the sides until they turn golden brown in colour.
  4. Soak fried vada in water for half an hour.
  5. Take a serving glass and add kanji water to it. Add soaked vada to it. Then garnish the drink with fresh mint leaves.
  6. Healthy and tasty 'Kanji Vada' is ready to be served. You may serve it warm or cold (by refrigerating the drink for few hours).
