Matar Suji Ki Kachori | Sooji Matar Kachori is a crispy tea-time snack.

Matar Suji Ki Kachori | Sooji Matar Kachori is a nice flavourful dish. The spicy green peas stuffing makes this kachori colorful and delicious. You can make this dish using fresh green peas, gram flour, semolina, and some spices. In addition, it is a good option for dinner, lunch, or for an evening snack for special occasions with tomato ketchup or green chutney. Tips and Suggestions by Mom Chef:

  • The ratio of water to suji should be 2:1.
  • Pav bhaji masala will make the stuffing flavourful.
  • The suji mixture should be lukewarm to prepare the kachori otherwise, it may be cracked.
  • Check the oil by adding a little suji mixture to the hot oil, if it immediately comes to the surface, it indicates that the oil is ready to fry kachori.

Ingredients

  • FOR PREPARING STUFFING :
  • Green peas / Hare matar - 1 Cup
  • Oil - 1 tbsp
  • Gram flour / Besan - 2 tsp
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/4 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Pav bhaji masala - 1 tsp
  • Ginger / Adarak - 1 Inch grated
  • Green chilli / Hari mirchi - 2 to 3 Finely chopped
  • Chilli flakes - 1/4 tsp
  • Coriander leaves / Hara dhaniya - A handful
  • FOR PREPARING MATAR SUJI KI KACHORI :
  • Water - 2 Cups
  • Semolina / Suji - 1 Cup
  • Salt - As per taste
  • Chilli flakes - 1/2 tsp
  • Oil - 1/2 tsp + For frying
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING STUFFING :
  2. Take green peas in a grinding jar. Coarsely grind it for a few seconds. Take it out in a bowl and keep it aside.
  3. Heat oil in a pan. Add ground green peas and gram flour. Mix well. Roast it for 2 to 3 minutes on low flame. Keep stirring continuously.
  4. Now add salt, turmeric powder, red chilli powder, all spice mix powder, pav bhaji masala, ginger, green chilli, and chilli flakes. Mix well.
  5. Roast it for 2 to 3 minutes on low flame. Keep stirring continuously. Once done, turn off the flame and keep it aside and let it cool down. Then add coriander leaves and mix well.
  6. FOR PREPARING MATAR SUJI KI KACHORI :
  7. Boil water in a pan. Add semolina. Mix well.
  8. Now add salt, chilli flakes, and oil. Mix well. Keep stirring continuously for 2 to 3 minutes until it becomes medium thick consistency mixture like a dough.
  9. Once done, turn off the flame and keep it aside for 2 to 3 minutes till it becomes lukewarm.
  10. Then add little oil and knead it well. Take a small ball sized part of the suji mixture and flatten it between your palms.
  11. Now add green peas stuffing in the centre of it. Then seal the ends of it to prepare a round shaped kachori. Likewise, prepare all kachoris.
  12. Meanwhile, heat the oil for frying the kachori. Check the oil by adding a little suji mixture to the hot oil, if it immediately comes to the surface, it indicates that the oil is ready to fry kachori. 
  13. When the oil is hot, place the prepared kachori in oil and fry it on a medium flame.
  14. Deep fry it until it turns golden brown from all sides. Once done, take it out to a serving plate. Likewise, fry all kachori.
  15. 'Matar Suji Ki Kachori | Sooji Matar Kachori' is ready to be served.
