  • You can adjust the spiciness as per taste.
  • Rice flour should be added for binding.
  • Roasted Black Pepper, dry coriander seeds, & cumin seeds powder will increase the taste of pakoda and vada.
  • FOR PREPARING TIL GUD KE LADOO :
  • The ratio of jaggery to sesame seeds should be 1:1.

Ingredients

  • FOR PREPARING METHI POHA VADA :
  • Flattened Rice / Poha - 1 Cup
  • Water - As required
  • Fenugreek Leaves / Hari Methi - 1 Cup chopped
  • Coriander Leaves / Hara Dhaniya - A handful
  • Onion / Pyaz - 1 Finely chopped (optional)
  • Ginger / Adarak - 1 Inch grated
  • Green Chilli / Hari Mirch - 2 to 3 Finely chopped
  • Rice Flour / Chawal Ka Aata - 1/2 Cup
  • Gram Flour / Besan - 1/2 Cup
  • Roasted Black Pepper, Dry Coriander Seeds, & Cumin Seeds Powder / Kali Mirch, Sukha Dhaniya, & Jeera Powder - 1 tsp
  • Chaat Masala - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Salt - As per taste
  • Cumin Seeds Powder / Jeera Powder - 1 tsp
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Roasted Sesame Seeds / Til - 1 tsp
  • Oil - For shallow frying
  • Tomato Ketchup - For garnishing
  • FOR PREPARING TIL GUD KE LADOO :
  • Sesame Seeds / Til - 1 Cup
  • Jaggery / Gud - 1 Cup chopped
  • Clarified Butter / Ghee - 2 to 3 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING METHI POHA VADA :
  2. Wash the poha. Then rinse the water. Keep it aside for 10 minutes.
  3. Take soaked poha in a mixing bowl. Add fenugreek leaves, coriander leaves, onion, ginger, green chilli, rice flour, besan, roasted Black Pepper, dry coriander seeds, & cumin seeds powder, chaat masala, asafoetida, salt, cumin seeds powder, turmeric powder, and red chilli powder. Mix well.
  4. Add water gradually to prepare a thick mixture of vada. Then add sesame seeds and mix well.
  5. Take a small ball-sized portion of the mixture. Press it with your hands and prepare flattened vada. Likewise, prepare all vadas.
  6. Meanwhile, heat oil in a pan for shallow frying over medium flame. Place the prepared vada in a pan. Shallow fry it on a medium flame for 2 to 3 minutes.
  7. Flip it and shallow fry it from another side on a medium flame for 2 to 3 minutes until they become crispy and golden brown from both sides.
  8. Once done, take it out on a serving plate. Garnish it with tomato ketchup.
  9. FOR PREPARING TIL GUD KE LADOO :
  10. Roast sesame seeds on low for 3 to 4 minutes. Keep stirring continuously. Then let it cool down.
  11. Take roasted sesame seeds in a grinding jar. Coarsely grind it for 2 to 3 times.
  12. Now add jaggery to the grinding jar and grind it for 2 to 3 times with sesame seeds on pulse mode.
  13. Take it out in a mixing bowl and add ghee. Mix well.
  14. Take a small, ball-sized part of the ladoo mixture, roll it between your palms and make a round shaped ladoo.
  15. Likewise, prepare all the ladoos. Take it out to a serving plate.
  16. 'Methi Poha Vada With Til Gud Ke Ladoo' is ready to be served.
