Mix Vegetable Paratha is the famous street food of Chandni chowk, Delhi.

Mix Vegetable Paratha is a delicious dish with vegetables and spices. It goes well with a boondi raita for breakfast, lunch, or dinner. Dry masala mix is the star of the dish as it adds plenty of flavors to these parathas.  Moreover, this paratha is loaded with nutrients, vitamins, protein, and minerals. Paneer is a rich source of protein, and thus, it is ideal for vegetarians. So, try to make this recipe in your kitchen and share your feedback with us.

Tips and Suggestions by the Mom Chef :

  • To make paratha crispy, add salt and oil/ghee while kneading the dough.
  • The vegetable can be added as per choice and availability.
  • Slightly roast the paratha before frying it, so it will not break while frying.
  • Oil can be used instead of ghee.

Ingredients

  • Carrot / Gajar - 1 Tablespoon grated
  • Cabbage / Patta gobhi - 1 Tablespoon chopped
  • Potato / Aloo - 1 Tablespoon boiled and mashed
  • Paneer / Cottage Cheese - 1 Tablespoon grated
  • Green peas / Matar - 1 Tablespoon
  • Papad - 1
  • Ginger / Adrakh - 1 Inch grated
  • Green chilli / Hari mirch - 2 to 3 finely chopped
  • Coriander leaves / Hara dhaniya - A handful
  • All spice mix powder / Garam masala - 1 Teaspoon
  • Roasted cumin seeds powder / Jeera powder - 1 Teaspoon
  • Red chilli powder / Lal mirch powder - 1 Teaspoon
  • Salt - As per taste
  • Dry mango powder / Aamchur - 1 Teaspoon
  • Whole wheat dough - As required
  • Clarified butter / Ghee - As required

Instructions

  1. Roast the papad and then crush it. Keep it aside.
  2. Boil green peas for 8 to 10 minutes on high flame till it becomes soft. Then drain water and mash it. Keep it aside.
  3. Now take all spices mix powder, roasted cumin seeds powder, red chilli powder, salt, and dry mango powder in a bowl. Mix well.
  4. Take carrot, cabbage, potato, paneer, mashed green peas, crushed papad, ginger, green chilli, and coriander leaves in a bowl. Mix well.
  5. Now add 2 to 3 Teaspoon prepared dry masala. Mix well. Keep the mix vegetable stuffing aside.
  6. Take a big ball-sized portion of the dough, shape it into a ball and flatten it. Dust it with flour. Roll it and prepare a small roti.
  7. Put the prepared mix vegetable stuffing in the centre. Join the edges and seal the paratha properly. Dust it with flour. Roll it and prepare the paratha.
  8. Meanwhile, heat a tawa. Place the paratha on the tawa. Slightly roast it from both sides.
  9. Meanwhile, heat ghee in a pan for frying. Place the roasted paratha into the hot ghee. Fry it on medium flame.
  10. Deep fry it until become crispy and golden brown. Then, take it out on a serving plate using a slotted spoon.
  11. 'Mix Vegetable Paratha' is ready to be served.
