Ingredients

  • Oil - As required
  • Garlic / Lahsun - 5 to 7 Cloves finely chopped (optional)
  • Spinach / Palak - 1 Cup finely chopped
  • Cumin Seeds / Jeera - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Onion / Pyaz - 1 Finely chopped
  • Roasted Peanuts / Moongfali - 1/2 Cup Peeled
  • Cashew / Kaju - 6 to 7
  • Sesame Seeds / Til - 1 tbsp
  • Water - As required
  • Tomato / Tamatar - 1 Finely chopped
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Coriander Powder / Dhaniya Powder - 1 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Cumin Seeds Powder / Jeera Powder - 1 tsp
  • Gram Flour / Besan - 1 tbsp
  • Salt - As per taste
  • All Spice Mix Powder / Garam Masala - 1/2 tsp
  • Dry Fenugreek Leaves / Kasuri Methi - 1 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Take peanuts, cashews, and sesame seeds in a grinding jar. Add little water and grind it for a few seconds to prepare it puree.
  2. Heat 1 tbsp of oil in a pan. Add garlic and saute it for a few seconds on medium flame. Then add spinach and Mix well.
  3. Saute it for 1 to 2 minutes on medium flame. Stir it occasionally. Once done, turn off the flame and keep it aside.
  4. Now heat 2 tbsp of oil in a pan. Add asafoetida, cumin seeds, and onion. Mix well.
  5. Saute it for 1 to 2 minutes on medium flame. Stir it occasionally.
  6. Then add tomato and mix well. Saute it for 1 to 2 minutes on medium flame. Stir it occasionally.
  7. Now add turmeric powder, coriander powder, red chilli powder, and cumin seeds powder. Mix well.
  8. Add besan and mix well. Now add little water and mix well. Now add the prepared puree and mix well.
  9. Then add salt, all spice mix powder, dry fenugreek leaves by rubbing between your palms, and sauteed spinach. Mix well.
  10. Once done, turn off the flame and take it out in a grinding jar.
  11. 'Shahi Malai Palak Without Malai' is ready to be served.
