Tri Colour Chutney | Republic Day Special is a quick and easy recipe.

Tri Colour Chutney | Republic Day Special is a Republic Day special recipe that has three different chutneys. These have all three colours of our Indian flag. The chutneys in the recipe are tomato onion-garlic chutney, coconut chutney and coriander chutney. Moreover, it is a quick recipe and can go with any dish like Dosa, Uttapam, Appe, Idlis, Parathas etc. These chutneys are easy to make and require basic ingredients that can be found easily.

Tips and Suggestions by the Chef:-

  • Let the sautéed mixture cool down before grinding it well in the grinder.
  • Use fresh coconuts for the coconut chutney.
  • Add peanuts and sugar in the coriander chutney to give it a thick consistency and maintain the green colour.
  • The consistency of the chutneys can be adjusted as per the taste.

Ingredients

  • FOR ONION-TOMATO CHUTNEY (ORANGE CHUTNEY):-
  • Oil - 1 Tablespoon
  • Ginger/ Adrak - 3 to 4 small pieces
  • Garlic/ Lehsun - 3 cloves
  • Dry Red Chilies/ Kashmiri Laal Mirchi - 2
  • Onion - 1 diced
  • Tomatoes - 2 diced
  • Carrot - 1/4 cup grated
  • Salt - as per taste
  • Water - as per requirement
  • FOR COCONUT CHUTNEY (WHITE CHUTNEY):-
  • Coconut - 1 cup chopped
  • Roasted Bengal Gram Dal/ Chana Dal - 1/4 to 1/2 cup
  • Tamarind/ Imli - as per taste
  • Ginger/ Adrak - 4 to 5 small pieces
  • Green chillies/ Hari Mirchi - as per taste
  • Sugar - as per taste
  • Salt - as per taste
  • Water - as per requirement
  • FOR CORIANDER CHUTNEY (GREEN CHUTNEY):-
  • Coriander leaves - A handful
  • Peanuts/ Moongfali - 15 to 20
  • Lemon juice - 1/2 Lemon
  • Salt - as per taste
  • Green Chilies/ Hari Mirchi - as per taste
  • Ginger - 3 to 4 small pieces
  • Sugar - as per taste
  • FOR TADKA:-
  • Asafoetida/ Hing - a pinch
  • Mustard Seeds/ Rai - 1/2 teaspoon

Instructions

  1. PREPARING ONION-TOMATO CHUTNEY (ORANGE CHUTNEY):-
  2. Heat oil in a pan and add 3 to 4 small pieces of ginger and 3 cloves of garlic with 2 dry red chilies to it. Stir it for a while
  3. Then add 1 diced onion and 2 diced tomatoes, grated carrot to it.
  4. Cover the pan for 5 minutes and let it sauté in low to medium flame.
  5. After 5 minutes, the mixture becomes mushy. Let it cool and then grind it using a grinder. Add water as per the desired consistency.
  6. One of the tri colours chutney is ready.
  7. PREPARING COCONUT CHUTNEY (WHITE CHUTNEY):-
  8. Add Bengal gram dal, chopped coconut, sugar, 3 to 4 small pieces of ginger to a grinder. Add chilies, salt and tamarind as per taste to it and grind it well.
  9. Add water as required for the consistency for the chutney.
  10. The white chutney is ready.
  11. PREPARING CORIANDER CHUTNEY (GREEN CHUTNEY):-
  12. Add a handful of coriander, 4 to 5 small pieces of ginger, 15 to 20 peanuts, 1 small cup of sugar to a grinder. Add salt and chilies as per taste to it and grind it all together.
  13. Add water as per the requirement of consistency of the chutney.
  14. The green colour chutney of the tri colour is ready.
  15. PREPARING TADKA:-
  16. Add a pinch of asafoetida and mustard seeds to hot oil and let it crackle.
  17. Pour tadka over the orange and white chutney.
