Khasta Pyaaz Ki Kachori is a delicious and mouthwatering Rajasthani snack.

Khasta Pyaaz Ki Kachori is a flaky and tasty kachori prepared from onion, potato, and spices stuffing. Kachori is flaky from outside and hollow inside. There are many varieties of kachori recipes in Indian cuisine and here we prepared the pyaaz kachori. Serve kachori with tamarind chutney or green chutney or garlic chutney or tomato sauce. Tips and Suggestions by Chef:-

  • Take ajwain between palms and crush it before using it.
  • I have used all-purpose flour (maida), but you can use a mix of both all-purpose flour and whole wheat flour or only whole wheat flour.
  • The thickness of kachori should be medium and not thin or thick.
  • You can take oil or ghee while kneading the dough.
  • Add lemon juice if you do not have dry mango powder.
  • Make sure, to add enough ghee while preparing the dough. You have to mix well, till you get a crumble like texture in the flour. When this mixture is pressed, it should not break.
  • After, the masala cools down, use it as a filling. Do not use it when it is hot.
  • Adjust the spices and serve it hot for the better taste.

Ingredients

  • Oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Coriander seeds - 1 teaspoon
  • Fennel seeds - 1 teaspoon (optional)
  • Ginger-green chili - 1 teaspoon grated
  • Onion - 2 finely chopped
  • Maida/ all purpose flour - 3 tablespoons
  • Salt - as required
  • Ajwain/ carom seeds - 1 teaspoon
  • Ghee/ clarified butter - 2 tablespoons or as required
  • Water - as required
  • Potato - 1 big-sized boiled
  • Besan/ gram flour - 1 tablespoon
  • Red chili powder - 1 teaspoon or as required
  • Turmeric powder - 1/4 teaspoon
  • Roasted cumin seeds powder - 1 teaspoon
  • Amchur / dry mango powder - 1/2 teaspoon
  • Garam masala/ all spice mix - 1/2 teaspoon or as required
  • Coriander leaves - 2 tablespoons finely chopped

Instructions

  1. Heat oil in a pan and add cumin seeds, coriander seeds, fennel seeds, and grated ginger-green chili. Saute it for 10 to 15 seconds.
  2. Add onion and saute it for 3 to 4 minutes on a low to medium flame.
  3. Meanwhile, take a bowl and add maida, salt, ajwain, and ghee. You have to mix well, till you get a crumble like texture in the flour. When this mixture is pressed, it should not break.
  4. Now, add little by little water and knead a medium consistency dough.
  5. Cover the dough with a moist muslin or kitchen towel. Let the dough rest for 10 to 15 minutes.
  6. Further, add mashed potato in the onion mixture and mix it properly.
  7. Meanwhile, preheat the air fryer at 180 degrees Celsius for 5 minutes.
  8. Now, add besan, salt, red chili powder, turmeric powder, cumin powder, amchur, garam masala, and saute it well on medium flame.
  9. Add coriander leaves and saute it well. Turn off the flame and allow it to cool down.
  10. After 15 minutes, lightly knead the dough. Then roll the dough on a log. Take a small portion from it and give it a round shape with the help of a rolling pin.
  11. Now, make a small ball from the above mixture. You can also spread some oil on your palms while making the ball.
  12. Place that stuffing ball on the dough.
  13. Bring the edges of the dough together and join them at the center. Excess dough can be pinched off and removed.
  14. Press and then flatten it gently.
  15. Now, grease the grids of the air fryer with the oil and place the kachori in it. Also, grease the kachori with the oil.
  16. Set the air fryer at 200 degrees Celsius for 20 minutes.
  17. After 10 minutes again grease the kachori. This is an optional step, you can also avoid it.
  18. Delicious Khasta Pyaaz Ki Kachori is ready to be served.
