Jaadui paratha is an innovative way to present the paratha that is consists of veggies, paneer, namkeen, sauces, and spices. It is a good variation to the regular paratha. Serve it with curd or pickle or sauce or chutney or tea or even you can have it as it is. It has the goodness of veggies and you can add more and more veggies to make it more nutritious.   • Instead of pani puri masala, you can also add chaat masala.
  • Use homemade paneer.
  • Mix oil and ghee and use it together to roast the paratha to enhance it’s taste.

Ingredients

  • Crumbled Paneer/ Cottage cheese - 2 tablespoons
  • Boiled Aloo/ Potato - 1
  • Pyaaz/ Onion - 1 chopped
  • Shimlamirch/ Capsicum - 1/2 chopped
  • Gajar/ Carrot - 1 grated
  • Boondi/ Indian snack - 1/2 cup
  • Papad - 2 to 3, break into pieces
  • Corn Flour - 1(1/2) teaspoon
  • Adrak- Hari Mirch paste/ Ginger- Green Chili paste - 1 teaspoon
  • Soy Sauce - 1 teaspoon
  • Tomato Sauce - 1 teaspoon
  • Pani Puri masala - 1/2 teaspoon
  • Kali Mirch powder/ Black Pepper powder - 1/2 teaspoon
  • Namak/ Salt - as required
  • Dhaniya Patta/ Coriander leaves - as required, finely chopped
  • Gehu Aata/ Whole Wheat flour - 1 cup
  • Maida/ All- purpose flour - 1/4 cup
  • Tel/ Oil - 2 teaspoons
  • Tel-Clarified Butter/ Oil-Ghee (mix) - as required

Instructions

  1. In a bowl, add crumbled paneer, boiled potato, onion, capsicum, carrot, boondi, papad, cornflour, ginger-green chili paste, soy sauce, tomato sauce, pani puri masala, black pepper powder, salt, and coriander leaves. Mix everything well.
  2. Now, in another bowl, take whole wheat flour, maida, salt, oil, and water. Mix the ingredients properly and knead the mix to prepare a dough.
  3. Take a small portion of the dough, give it a ball shape and flatten it. Dust it with the whole wheat flour and roll it a little.
  4. Place the above-prepared mixture at the centre and pleat the edges properly.
  5. Press it and gently roll it using a rolling pin.
  6. Now, heat a tawa and place the rolled paratha.
  7. Roast it properly on both sides and apply the oil-ghee to both the sides of paratha.
  8. Roast the paratha until golden and crispy.
  9. Transfer it to a plate and cut it into desired pieces
  10. Delicious Crispy Jaadui Paratha is ready to be served.
