Gatte Ka Pulav is a delicious and unique rice dish from the Marwari cuisine of Rajasthan.

Gatte Ka Pulav is a simple and traditional Rajasthani dish that is prepared from chickpeas flour dumplings called gatte and boiled rice with a lot of aromatic spices. Serve it with famous Rajasthani dal and raita for a tasty hearty meal for dinner or lunch. A rustic but so full of comforting flavors meal tastes incredibly delicious. It can be served to your guest on special occasions or can be packed into a lunch box for a wholesome meal. Serve this Gatte ka Pulav with Hyderabadi Mirchi Ka Salan. Ingredients

  • Besan/ gram flour - 1 cup
  • Salt - as required
  • Turmeric powder - 1 teaspoon
  • Red chili powder - 2 teaspoons
  • Coriander powder - 2 teaspoons
  • Ajwain/ carom seeds - a pinch
  • Fennel powder - 1 teaspoon
  • Dry mint powder - 1 tablespoon
  • Curd - 2 tablespoons
  • Oil - as required
  • Water - as required
  • Cumin seeds - 1 teaspoon
  • Green chili - 1 finely chopped
  • Ginger - 1 small piece finely chopped
  • Onion - 1 medium-sized sliced
  • Bay leaf - 1
  • Cardamom - 1
  • Cinnamon - 1 small piece
  • Cloves - 2
  • Cashews - 10 to 12
  • Garam masala/ all spice mix - 1 teaspoon
  • Boiled rice (water, basmati rice, and salt) - 1 bowl
  • Raisins - 4 to 5 (optional)
  • Lemon juice - 1/2 lemon
  • Coriander leaves - finely chopped as required for garnishing

Instructions

  1. Take a bowl and add besan, salt, turmeric powder, red chili powder, coriander powder, ajwain (crush the ajwain between hands), fennel powder, dry mint powder, curd, and oil. Mix it well.
  2. Now, pour water in the batches and make a soft dough. Add some oil and knead it properly.
  3. Take the small portion of equal size from the dough and give it a cylindrical shape.
  4. Now, boil the water and place the gatte roll in it.
  5. Further, cover and cook it for 8 to 10 minutes.
  6. Transfer the gatte to the plate and allow it to cool down.
  7. Cut it into equal size pieces and keep it aside.
  8. Heat 1 tbsp of oil in a pan and add cumin seeds, green chili, ginger, salt, and onion. Saute it well.
  9. Add bay leaf, cardamom, cinnamon, and cloves. Saute it well.
  10. Add cashew, gatte, and saute it on a low to medium flame.
  11. Add red chili powder, turmeric powder, salt, coriander powder, and garam masala. Saute it and add boiled rice and mix it gently.
  12. Add raisins and turn off the flame.
  13. Squeeze lemon and mix it well.
  14. Lastly, garnish it with the coriander leaves.
  15. Delicious Gatte Ka Pulav is ready to be served.
